There's lot's of products out there that you can use to create texture on canvas. Modelling compounds and such.
The best advice I can give you is to go to an art supply shop and ask them to show you their range, they will know the best one depending on what medium you are painting with, size of canvas etc.
Of course art is always an exploration, experiment with different substances, you never know, plaster a paris might be the best thing for the look you are going for.

I have used everything from Polyfilla (in squeezable tubes) to Tetrion, No More Nails, and Easy Nails (from Homebase). Although none of these are truly 'plaster', you'll be amazed how well they blend with other textures such as sand and fibres on the canvas.

If you want your work to last make sure your canvas is properly sealed as a lot of fillers will eat into it and it will start decaying in a short time span.

Sharon - I agree with Jaffajaf. Experiment with everything you can find but I have in the past used Pollyfiller and similar and it works really well, especially mixed with other things, such as sand etc. Have fun and good luck!

You could try layering thick acrylic paint.
