Buddy, "pagan" is a blanket term covering hundreds of different religious beliefs, from Asatru to Wicca and beyond. According to some definitions any religion that isn't a part of the Abrahamic beliefs(Jewish, Christian, and Islam) is considered pagan.

I agree with you that most pagans are nice people. I believe this because most pagans try to completely live their lives according to their beliefs and to the basic tenet of "do what you will, but harm none."
Since my beliefs tend toward earth-based paganism, I particularly like the native american stories, and have attached a link that has some of my favorites. There is another link that has some stories as well.
Blessed be,

paganism covers a lot of ground.
most of the pagan religions are earth based and center around the changing of the seasons.
i suggest that you read everything that you can get your hands on.

Read the Poetic and Prose Eddas.
(Note: I am Asatru, obviously not all Pagans follow the same religion I do. Paganism covers a vast array of religions.)

Paganism doesn't really have a text anyone follows, it's a personal religion based on celebration of life and reverence for nature.

I follow a Celtic Reconstructionist path. It is not an old religion--it is simply based on the culture and practices of the ancient Celts (at least as well as we can determine what their practices were). For more info and a good description:
