Stuffed shells goes a long way, and you can have some leftovers for lunch the next day . Brown some ground beef and sausage together , drain , mix in large bowl with a bag or two of shreaded cheese ( whatever kind you like ), and some Italian bread crumbs. Add a cup or so of spaghetti sauce , ( just enough to moisten ) . Boil large shells according to directions, drain , lay out on waxed paper so they don't stick together, cool enough to work with , then put a thin layer of sauce in a 13x9 cake pan, stuff the shells with the mixture, cover completely with more sauce, then sprinkle with parm. cheese and more shreaded cheese, actually , put parm. cheese on TOP layer cause it doesn't stick to the foil as much . Cover with foil and bake according to directions . Have another pan ready or don't cook all the shells , cause it really makes a lot . I use 2 cans or jars of sauce too . Make or buy some garlic bread too ! And salad or green beans . Stuffed shells are also good made with chicken instead of ground beef and sausage. Your mixture would be boneless , skinnless chicken breasts, cooked , cut up and seasoned to taste, instant stuffing and /or mashed potatoes ( also instant , it saves a lot of time ), cheese , and the bread crumbs. You also substitute everywhere you would have spaghetti sauce, with chicken gravy instead. Add or subtract anything ya want according to your and your father - in - law's tastes. They are both really good and go a long way ! And don't forget to make a cake . Try mixing a tub of cool whip and a can of frosting (any flavor ) , it's really good too ! But you will have to keep the cake in the frig. because of the cool whip. I usually make a round ,layered cake when I do this cause I have a cake cover for this and it fits in the frig better . Even if you have a lid for a 13x9 pan , the cool whip makes it too thick and it will stick pretty bad ! Good Luck ! I almost forgot , deviled eggs are a good side dish or appetizer also !

I'm a southern girl, so I may be able to help you out with good home cooked meals.
Roasts are always a good idea. I put ridiculous amounts of worstershire and about a half packet of instant brown gravy mix. On high heat, brown minced garlic in olive oil and a little wostershire. Sear both sides of the roast (still on high heat). Add water and gravy mix (about 1/2 inch from the top). MORE wostershire, steak seasoning, garlic powder, and whatever other spices. Simmer on med low for a couple of hours. When meat is tender, add carrots, 10 minutes later add potatoes. I love pressure cookers for this; it only takes a half hour-45 minutes in those.
Ribs are always good, and there's nothing wrong with cooking a big breakfast at suppertime.

if you just want to spend the day with him no hassles then put some stew or a pot roast in the crock pot in the morning then you have the rest of the day to enjoy. You could also get a tri tip and BBQ with baked potatoes and a veggie. My family always loves the garlic bread. You should make something that's your hubby's favorite that way you know it is good he may have bragged about it to his family and both your hubby and his dad can enjoy. I don't know about your guy but my hubby and kids can't get enough homemade cookies. Make some pancakes and eggs for breakfast. some sandwiches on hogie rolls for lunch with mac or potato salad.

Don't spend all your time cooking and miss out on the company. See if there is a local casserole/meat company in your area. I buy marinated chicken breasts or steaks and a 10x12 potato and cheese with sour cream casserole and toss a salad. I put the casserole in the oven to bake till bubbly, hubby grills the meat and I toss the salad. Or I buy The chicken enchiladas with a sides of rice and beans. They are hand made gourmet and you can pop them out of their frozen tins and bake in your pyrex dishes so it looks like your homemade. My local company makes all types of side dishes and entress like Fettucine Alfredo with Crabmeat, Chow Mein, Mannicotti, Beef and cheese enchiladas, Beef Stroganoff with real steak strips, and Italian Sausage Picatta. Heat, warm some garlic bread and toss a salad. Enjoy a cocktail and conversation! I'm just outside the Houston area.

What does he like? If he's a meat and potatos kind of guy, then grilled steak will do. If he favors seafood, how about some grilled salmon? Some men prefer pasta so I'd just make a big pot of spaghetti and meatballs. No need to go crazy and try to be a gourmet chef!

If he's not picky then cook the things you enjoy/make the best. When my mother and father in law come that's what I do. They aren't picky eaters, and its fun to let theym try some of the things I make particaularly well. My father-in-law even said to make sure they get the recipe for one of the things I made.

Ask him some of his favorites and go from there. He will think that is cool. I always make my father-in-law skillet fried chicken when he comes for a visit. It's kinda cool to spoil him since we only get to see him a few times a year. Plus it will make your husband proud that you care enough. It's a win-win situation.

ask him what he like and find out what he wants to eat. Steak is usually well received. Salmon patties for breakfast. or Pancakes, bacon, eggs.

Chicken salad sandwitches for lunch. BLTs are also a big favorite at my house. Tacos are always a crowd pleaser, but you should ask to find out what kind of diet he is on.

Give him some manly-man food, like stew, chili or a hearty soup. A nice loaf of crusty bread goes well with any of these.
