Demi is the result of cooking beef bones and trimmings for a long time in a pot...
It might as well be called Concentrated beef Gravy!

With a demi-glace, the bones and veggies are usually browned first, then simmered forever until it reduces and gets very concentrated.

Gravy is just some drippings and flour and broth.
