I created this recipe as a special at a restaurant I used to work at, it can easily be altered to include more or less ingredients. Basically anything that is not to your taste you can remove.

Ingredients:
5 Shrimp (peeled and deveined)
1/4 cup peas (i used frozen green peas)
1/4 cup red onion (sliced)
1/4 cup mushrooms
1/2 cup heavy cream
1.5 tbsp butter
2 cups cooked pasta (I prefer angel hair in this recipe)

2 Tbs. red curry paste (for curry sauce..this is my original recipe)

OR (if curry isn't your thing)
1/4 cup grated Parmesan (for Alfredo sauce

OR
3 Tbs. crumbled Gorgonzola (if you like bleu cheeses)

Method:
Saute the onions, peas, mushrooms, and shrimp with the butter and the curry paste (if you are opting for the curry). Saute until the onions become soft (about 2 minutes).

Add the heavy cream (and cheese if that is what you are opting for) and stir well. Cook the mixture until it reduces by half and becomes thick and bubbly around the edges.

Add pasta and cook until thoroughly heated.

Salt and pepper to taste.

So delicious...especially the curry option!

Hope that helps. :o)

The Chcken Pea Casserole sounds great. The only suggestion I have the frozen baby peas with pearl onions and using a smaller sized pasta. Just because I like the pearl onions and my grands like tiny pasta.
