Meat Loaf 101

Serves 8 to 10

4 slices white bread, torn into pieces

2 1/2 pounds ground beef

1 medium yellow onion, peeled and cut into eighths

2 garlic cloves

2 celery stalks, cut into 2-inch pieces

2 carrots, peeled and cut into 2-inch pieces

1/2 cup flat-leaf parsley leaves

1 large egg

1 cup ketchup

3 teaspoons dry mustard

1 tablespoon coarse salt

2 teaspoons freshly ground black pepper

2 tablespoons brown sugar

1. Heat oven to 375°. Place bread in the bowl of a food processor fitted with the steel blade; pulse until fine crumbs form. Transfer to a medium bowl, and add ground beef.

2. Place onion, garlic, celery, carrots, and parsley in the bowl of a food processor fitted with the steel blade; pulse until fine. Add to meat mixture, using hands to mix well. Add egg, 1/2 cup ketchup, 2 teaspoons dry mustard, salt, and pepper; use hands to combine thoroughly. Place in an 8 1/2-by-4 1/2-by-2 1/2-inch loaf pan.

3. Combine remaining 1/2 cup ketchup, remaining teaspoon dry mustard, and brown sugar in a bowl; stir until smooth.

4. Brush mixture over meatloaf; place in the oven with a baking pan set on the rack below to catch drippings. Cook until a meat thermometer inserted in the center reads 160°, about 90 minutes. If top gets too dark, cover with foil, and continue baking.

Brown Sugar Meatloaf
INGREDIENTS
1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 pounds lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine cracker crumbs
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
Bake in preheated oven for 1 hour or until juices are clear.

1 1/2 lbs ground beef (I like chuck)
1/2 cup crushed round buttery crackers
3/4 cup shredded sharp cheddar cheese
1 (1 1/4 ounce) package dry onion soup mix
1/4 cup ketchup
2 tablespoons A-1 Steak Sauce
1 tablespoon Worcestershire sauce
1 egg
2 slices bread

Preheat oven to 350 degrees.

In a large bowl, mix all ingredients except bread slices together thoroughly.

Line bottom of loaf pan with the sliced bread. (This will help absorb most of the grease that cooks out of the beef.)
Press meatloaf mixture firmly in the loaf pan and bake for 60 minutes or until done.

This recipe is very basic. To spice it up, substitute the oats with crushed saltine crackers or breadcrumbs. Use more ketchup, or even try steak sauce!!!

1/2-1 cup ketchup
3/4 cup rolled oats
1 egg
1/4 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon ground black pepper
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine meat, tomato juice, oats, egg, chopped onion, salt and pepper. Mix lightly but thoroughly. Press into 8x4 inch loaf pan.
Bake for 1 hour, or until meat is no longer pink and juices run clear. Drain. Let stand 5 minutes before serving.

This will sound crazy but it makes the moistest meatloaf you've ever eaten!

Use 1 lb hamburger raw, mix in a couple slices of diced onion, three eggs, 3/4 cup ketchup, 1/3 cup mustard, a little pepper. While you are mixing all of this together pour a cup of grape nuts cereal into a seperate bowl. Add a cup of milk to it and let it set for about fifteen minutes. Go ahead and mix the other ingredients up. A lot of times I just wash my hands throroughly and use them to mix everything up really good. After everything is mixed, and the grape nuts have set for at least 15 minutes go ahead and pour them into the hamburger mixture milk and all. There really shouldn't be much milk left. The grape nuts should have absorbed most of it. Mix it all up really well. Then grease up you meatloaf pan, and put your meatloaf mixture into the pan. Cover it with foil. Bake at 350 degrees for 45 minutes. Then remove foil, and bake and additional 10 to 15 minutes to brown the top as needed. Serve. It is delicious, and really moist. Not dry like most meatloafs. Unbelievable Chicken Meatloaf:

1¾ hours 10 min prep
8 servings

1 lb ground chicken
1/2 cup fine breadcrumbs
1 large egg white
1 medium carrot
1 small onion
1/4 cup ketchup
1/2 teaspoon minced garlic
1 teaspoon Worcestershire sauce
1/4 teaspoon celery seeds
1 teaspoon salt
1/8 teaspoon pepper

1. Preheat oven to 350 degrees.
2. Combine chicken and bread crumbs in large bowl.
3. Set aside.
4. Cut the carrot& onion into chunks and add to blender.
5. Add the remaining 7 ingredients to the blender.
6. Process in blender until carrot is very fine.
7. Pour blender mixture over meat mixture.
8. Mix very well using your hands.
9. Form mixture into a loaf and place in lightly greased 9" X 13" pan.
10. Cover with foil and bake for one hour.
11. Remove foil& continue baking for 15-30 minutes, until loaf is cooked through.

Well, here's one that I can't take credit for......comes courtesy of Kraft Foods, and with only 5 ingredients, goes together in a snap......The secret is that you use no breadcrumbs, you use a package of Stove Top Stuffing as the binder........Hope you enjoy this, and feel free to add anything you like to give it the personalized kick you like:


2 lb. lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs, beaten
1/2 cup KRAFT Original Barbecue Sauce, divided



PREHEAT oven to 375°F. Mix all ingredients except 1/4 cup of the barbecue sauce.
SHAPE meat mixture into oval loaf in 13x9-inch baking dish; top with remaining 1/4 cup barbecue sauce.
BAKE 1 hour 15 min. or until cooked through (160ºF).

Meatloaf:
Mix all in large bowl:
1,1/2 pounds ground beef
1/2 cup dry oatmeal
1 package crushed crackers (saltines)
1 large egg white
1 small onion diced
2 cloves garlic diced
1small can tomato sauce
1 teaspoon Worcestershire sauce
1/2 teaspoon black pepper
No salt is needed because the crackers have salt

Put mix in 9" X 13" baking dish cover with foil and cook 60 minutes.
Open foil cover meatloaf with catsup leave foil off and cook another 15 minutes.

about 2-3 lbs of ground beef or turkey
1 1/2 cups of kc masterpiece bbq sauce
1 palm full of contadina bread crumbs
2 celery sticks copped
1/2 onion chopped
veggies optional
pre heat oven to 350
mix all ingrediants together, form into a loaf
leave in for about 45 while in oven add some bbq sauce to the top of maet loaf so it does not dry out.

meatloaf is simple

preheat over to 375

1/2 onion chopped
1/2 green pepper chopped
2lbs hamburger
1 can tomato soup
1 dash salt
1 dash pepper
1 cup ketchup

mix all together and shape into a roll. place on a baking pan glass works well. Cook for 45-50 minutes. take kethcup and cover top of roll and place in over for 5-10 more minutes.
