Well, here's one that I can't take credit for......comes courtesy of Kraft Foods, and with only 5 ingredients, goes together in a snap......The secret is that you use no breadcrumbs, you use a package of Stove Top Stuffing as the binder........Hope you enjoy this, and feel free to add anything you like to give it the personalized kick you like:


2 lb. lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs, beaten
1/2 cup KRAFT Original Barbecue Sauce, divided



PREHEAT oven to 375°F. Mix all ingredients except 1/4 cup of the barbecue sauce.
SHAPE meat mixture into oval loaf in 13x9-inch baking dish; top with remaining 1/4 cup barbecue sauce.
BAKE 1 hour 15 min. or until cooked through (160ºF).

Meatloaf is basically beef, some add pork or veal, and whatever ingredients which float your boat! Add what you'd like just keep in mind to use a binder, either bread crumbs or eggs-or both! I do my own all the time! This is mine:

Ground beef- 85% fat content
bread crumbs
eggs
bell pepper
celery
onion
parmesean cheese
milk or cream
salt
pepper
dijon mustard
ketchup
horse radish sauce
parsley
seasonings- use what you like
Mix together (just combine-don't over mix or you will have mush) and bake in an oven proof dish for about an hour. I coat the top with ketchup the last 15 minutes or so of baking!

Italian Style Meatloaf Recipe

1 pound ground chuck
1/2 cup Italian style breadcrumbs
1/2 cup milk
1 egg, beaten
1/4 teaspoon fennel seed
1/2 teaspoon basil
1/2 teaspoon oregano
salt and pepper, to taste
1 small onion, minced
1 teaspoon garlic, minced
2 teaspoons olive oil
Marinara sauce or ketchup, optional

Heat oven to 350.

Mix together the chuck, breadcrumbs, milk, egg and spices. Set aside.

Heat the oil in a skillet. Add the onion and garlic. Cook until just soft. Add to meat mixture. Put into a loaf pan and bake on a cookie sheet for 1 hour or until firm in the middle. Top with sauce or ketchup, if using, after slicing.

Brown Sugar Meatloaf

INGREDIENTS
1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 pounds lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine cracker crumbs
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
Bake in preheated oven for 1 hour or until juices are clear.

If you utilize a reliable meatoaf recipe as a base, you can spread the meat mixture flat on a cookie pan, layer Ham, Swiss and sauteed Spinach in the center. Going lengthwise, roll the loaf to encase the filling. Wet your hands with a lillte water and rub over the seam to form a seal. Apply the same technique to the ends and bake at 300F for roughly an hour, or until the centermost part of the loaf reaches 155F with a meat thermometer. Has great presentation as little colorful pinwheels.

I just made this 2 nights ago for the first time.

1 lb ground beef
1 egg
1/2 cup bread crumbs
1 can tomato soup
1/2 green pepper
1 tsp salt/season salt
1 tbs minced garlic
Curry Powder to taste

Put the Ground Beef into a large mixing bowl, add all ingredients except tomato soup, mix, place in glass baking dish. Place sliced green peppers on top in lines, pour 1 Can tomato juice over the top, then add about 1/2 of that can filled with water. Bake at 375 for about 90 minutes.

It was so good I'm starting to drool again... =)

Stuffed Mexican Meatloaf

Ingredients:
2 lb Ground Beef Chuck
8 oz (1 cn) Tomato Sauce
1/2 c Taco Seasoning Mix * PLUS
2 tb Taco Seasoning Mix *
1/3 c Chopped Green Pepper
1/3 c Finely Chopped Onion
1 1/2 ea Slices White Bread **
1 ea Large Egg, Slightly Beaten
2 c Shredded Cheddar Cheese
1/2 c Sour Cream
1 x Cheddar Cheese Slices

GARNISHES:
1 x Avocado Slices
1 x Cherry Tomatoes

Instructions:
* Total Amount of Taco Seasoing mix is 1/2 cup plus 2 Tablespoons. ** Tear bread slices into fresh bread crumbs.
Combine ground beef, tomato sauce, taco seasoning mix, green pepper, onion, bread crumbs and egg; mix thoroughly. Combine shredded cheese and sour cream. Place half the meat mixture in 9 1/4 x 5 1/4 x 2 3/4-inch loaf pan. Make deep well the length of loaf; place cheese mixture in well. Place remaining meat mixture on top of cheese; seal well. Bake in moderate oven (375 degrees F.) 1 1/2 to 1 3/4 hours. Pour off drippings. Top meatloaf with overlapping cheese triangles. Let meatloaf stand 8 to 10 minutes. Place on serving platter and garnish with avocado slies; place cherry tomato in center of each avocado slice.

How about make it bacon cheese burger meat loaf !!!
*** just spread the meat mixture on top of plastic wrap and then on the center put some cheedar cheese and crispy bacon slices then fold the whole thing and bake it.
*** and the best your change ingrediens to whatever
* feta cheese, black olives & spinach
* spanish = roasted peppers, green olives, boiled eggs
* swiss cheese, saute onions & mushrooms
*broccoli & cheddar cheese
you have many options here just have fun...

1/2 cup egg beaters
2 stalks celery chopped

Mix all together bake at 350F until done, let rest for 5 minutes, invert on serving plate drizzle with catsup and serve.

My mom used to put them into muffin tins and everyone got a little bitty meat loaf. For some reason we wouldn't eat the big loaf
