Sure can....often used in lasagna in place of ricotta, but personally I think the texture isn't that great. I have a potato dish which uses cottage cheese....gets very good reviews when we have guests and it's easy to make ahead and refrigerate.

4 large potatoes (about 2 pounds)
8 oz sour cream
8 oz small curd cottage cheese
1 egg (beaten)
1/4 cup milk
1/4 cup finely chopped onion
2 tbsp butter (divided)
butter flavored cracker crumbs

Peel and boil potatoes until fork-tender...drain. In a mixing bowl, beat potatoes, milk, and 1 tbsp butter until light and fluffy. Gently fold in sour cream, cottage cheese, egg, and onion. Smooth into a lightly greased baking dish. Can be covered and refrigerated prior to baking.

Before baking, combine cracker crumbs and 1 tbsp melted butter. Sprinkle crumbs over potatoes and bake uncovered at 350-degress for about 30 minutes. This also works nicely with finely shredded monterrey-jack cheese and some diced green onion tops over the potatoes. Serves 6 - 8.

You can make a very tasty low calorie flan by mixing a tub of cottage cheese with 2 beaten eggs, and seasoning. Slice some onions into a flan dish, cut up some ham and add to onion. Pour cheese mix over, add sliced tomatoes for garnish. Cook in a medium oven until set. This tastes best when eaten warm.

Chicken Lasagna
INGREDIENTS
18 lasagna noodles
1 1/2 cups cottage cheese, creamed
3 cups diced, cooked chicken meat
2 cups shredded Cheddar cheese
1/2 cup grated Parmesan cheese

1/2 cup chopped onions
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 1/2 cups sliced mushrooms
4 tablespoons butter
1 (10.75 ounce) can condensed cream of chicken soup
1/3 cup milk
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of lightly salted water to a boil. Add lasagna and cook for 8 to 10 minutes or until al dente; drain.
In a saucepan melt the butter and saute the onions, green peppers, red peppers, mushrooms. Add chicken soup and milk; cook until smooth.
In a 9x13 inch baking dish, layer noodles, cooked chicken, soup mixture and cheeses. Alternate until gone. Bake in a preheated oven for 45 minutes.


You can use cottage cheese in some cheesecakes, sauces and in lasagna instead of ricotta cheese. some people eat cottage cheese and fruit.

I make my macaroni and cheese with cottage cheese and everyone raves about it. Seriously.

8 oz. macaroni, cooked
2 cups small curd cottage cheese
8 ounces sour cream
1 egg, lightly beaten
3/4 teaspoon salt
dash pepper
2 cups shredded cheddar cheese
paprika

Combine cottage cheese, sour cream, egg, salt and pepper in a bowl. Stir in shredded cheese. Add cooked, drained macaroni, stirring well. Pour into a greased 9-inch baking pan and sprinkle with paprika. Bake at 350 degrees for 45 minutes.

Mix one tub of cottage cheese , one tin corned beef and 2 eggs.

Spread evenly in pie tin. Cook at 160 for about 20 minutes.

Top with sliced tomatoes just before the end of cooking.

Serve warm with mixed salad.

Sounds awful but is really delicious, quick and easy.

I was surprised to read on the label of some really excellent stuffed fish I had recently that cottage cheese was one of the ingredients. I now plan to investigate that much more fully! (btw, it didn't taste like cottage cheese at all)

Absolutely! Any recipe that calls for ricotta cheese you can substitute cottage cheese for a healthy alternative. Try using it to stuff shells, with ground beef or chicken. Brown your meat, with onions and garlic, mix in cottage cheese, stuff shells, pour marina sauce over it, and bake till heated through. If you want more of a cheese flavor, try adding shredded mozarella into the stuffing.

In my refrigerator right now is the easiest quiche ever--coat a pie crust with about a cup of cheese (I recommend mixing varieties), sautee a 10 oz package of frozen chopped spinach with a chopped onion, put the spinach mixture in the pie crust, and add a mixture of four beaten eggs mixed with a bit of spice (nutmeg, dill, pepper, salt), top with between a cup and half a cup of cottage cheese, bake for 50 minutes at 375.

Absolutely! Many low end restaurants serving lasagna use cottage cheese instead of ricotta! There are many recipes which demand it's use also! Google cottage cheese recipes and I'm sure you'll be busy all afternoon!

ive never cooked it, but i found a nice recipe in a delia smith book for mackerel pate. is basically 2 cooked mackerel fillets (vaccuum packed from the supermarket) mashed up to however rough you want it with a tub of cottage cheese, squeeze of lemon and some black pepper. i was a bit dubious bout it, but its seriously good! i buy the smoked or peppered mackerel sometimes for a change, or go for the cottage cheese with spring onion.
