For the actual meaning of the word, it probably comes from the same root as the English/ French term "servant" (serving) which may have changed slightly in spelling as the "ce" is soft when pronounced and sounds identical to "se".The term was used not just for domestics but also for knights (chevaliers servants) who followed the kings at war.
