CREAM CHEESE BROWNIES
1 (20-23 oz.) pkg. brownie mix (pecans, optional)
8 oz. cream cheese, softened
1/3 c. sugar
1 egg
1/2 tsp. vanilla
Prepare brownie mix as directed on package. Reserve 1/2 cup of batter. Cream cream cheese and sugar. Add egg and vanilla. Spread brownie batter (minus 1/2 cup) on bottom of a greased 13 x 9 inch pan. Cover with cream cheese mixture. Spoon on 1/2 cup brownie batter and swirl. Bake at 350 degrees for 35-40 minutes. Easy!

I have tried a LOT of different recipes for brownies and this one is our favorite by far. It is easy, and the brownies are delicious and chewy. I got this cookbook from my grandparents when I was a kid and now my kids love this recipe too! I hope your girlfriend will too!
Big Bad Wolf’s Brownies
½ cup butter
2 squares (2 oz) unsweetened chocolate
1 cup sugar
½ cup flour
1 teaspoon baking powder
1 teaspoon vanilla
½ cup pecan or walnut pieces, raisins, or salted peanuts (optional)
2 eggs
Preheat oven to 350, grease a 9” square pan
Melt butter and chocolate in large saucepan over low heat. Remove from heat
Combine dry ingredients, then add to chocolate mixture, along with the vanilla and nuts. Add eggs and beat well with an egg beater.
Pour batter into baking pan, bake for 30 mins.
Brownies are ready when they start to separate from sides of pan and the center is fairly stiff when jiggled.

Okay let's keep it easy in case it's the first attempt at baking for you...
Chocolate Cake Brownies.
1 1/2 Cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter (don't use margarine)
1 1/4 cups sugar
2 eggs
3 squares (3 ounces) unsweetened chocolate,melted and cooled
1 teaspoon vanilla
1 cup milk
1 cup chopped walnuts (I prefer pecans)
Chocolate frosting
Grease a 15x10x1" baking pan. Pre heat oven 350 degrees
In a mixing bowl Combine flour, baking powder, and salt, stir this while it's dry to mix...
In a separate bowl beat butter for 30 seconds, add sugar (a little at a time) and beat until it is "fluffy" (this means increases in volume.
Add eggs, melted(cooled) chocolate and vanilla.beat well
Add dry mixture and beat, then add a little of the mix and beat, continue to alternate in this way until your completely
combine these items. Stir in nuts.
Turn batter into baking pan.
Bake in 350 oven for 18 to 20 minutes
Cool on a wire rack (this is necessary so they won't sweat)
Frost with chocolate frosting if desired.

Duncan Hines brownie mix, easy and really good! Just don't bake them until they're hard! A little bit chewy is the best!
If you don't want to use a mix, brownies in the Joy of Cooking, I think it's the recipe for Brownies Cockaigne, I think they're called, are terrific. Very moist, hugely chocolatey, not cakelike and remind me of chocolate truffles... they're superb... can't find my book right now, or I'd post the recipe, but if you go to a bookstore to snipe it, or a library, you can get it easily! It's an easy recipe, and really no fail!

BROWNIES (EASY METHOD)
6 tablespoons cocoa
1/4 cup butter
1 cup sugar
1/2 teaspoon vanilla
1/4 teaspoon salt
1/3 cup flour
1 cup toasted pecans (optional)
2 eggs
Preheat oven to 325°F degrees.
Melt butter and mix it with 6 tablespoons of cocoa powder. Then add 1 cup of sugar, 2 eggs, 1/2 teaspoon of vanilla extract, 1/3 cup flour and 1/4 teaspoon salt. Mix to combine.
Butter the baking pan lightly and sprinkle flour or cocoa over the pan until covered. This will help the mixture not to stick to the dish.
Spread brownie batter evenly in pan and put in oven to bake for 35-40 minutes. When a tooth pick is inserted and it comes out clean the brownies are ready.
Allow to cool until warm before cutting.
My kids and I put little peanut butter squares in them before we bake them. mmmm so good.

Chewy Peanut Butter Brownies
INGREDIENTS
1/2 cup peanut butter
1/3 cup margarine, softened
2/3 cup white sugar
1/2 cup packed brown sugar
2 egg
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C ). Grease a 9x9 inch baking pan.
In a medium bowl, cream together peanut butter and margarine. Gradually blend in the brown sugar, white sugar, eggs, and vanilla; mix until fluffy. Combine flour, baking powder, and salt; stir into the peanut butter mixture until well blended.
Bake for 30 to 35 minutes in preheated oven, or until the top springs back when touched. Cool, and cut into 16 squares.

Blonde Brownies:
1 hour 30 min prep
16 servings
8 pieces

1 teaspoon salt
2 teaspoons vanilla
1 cup chocolate chips
1 cup chopped pecans (optional)
1. preheat oven to 350°F.
2. Melt margarine.
3. Add to sugar in bowl set aside.
4. Beat eggs add to sugar & margarine.
5. Sift together flour, baking soda,& saltAdd vanilla then nuts if used.
6. Spread into a 13 x 9 pan.
7. Sprinkle chocolate chips on top of batter.
8. Bake at 350° for 25 - 30 minutes.
9. Cover these when you take them out of the oven.
10. They will stay soft!

Easy Chocolate Saucepan Brownies
6 tablespoons butter

1 cup granulated sugar
2 large eggs
3/4 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped pecans or walnuts
Heat oven to 325°. Grease and flour an 8-inch square baking pan.
In a saucepan over low heat, melt the butter and chocolate, stirring constantly. Remove from heat and let cool. With a whisk, beat in the vanilla and sugar.
Whisk in eggs, one at a time, beating well after each addition. Stir flour, measure into a small bowl, and stir in the baking powder and salt, blending well. With a wooden spoon, stir the flour mixture into the first mixture. Stir in the chopped nuts, blending well. Spoon into the prepared pan and spread evenly. Bake the brownies for about 25 minutes.
Chocolate Brownies with Chocolate Icing
1 stick (4 ounces) butter
1/4 cup cocoa
3 eggs
1 cup sugar
1 cup flour
1 teaspoon baking powder
1 cup chopped pecans
1 teaspoon vanilla
Grease and flour an 8 x 8-inch baking pan. In a small saucepan, melt butter with cocoa. Beat eggs until foamy, then gradually beat in sugar. Add cocoa-butter mixture to egg mixture. Sift flour and baking powder then sift half of it into batter.
Mix pecans into the remaining flour; add to cake batter; stir to blend well. Add vanilla. Spread batter into the pan; bake at 350° for 20 to 25 minutes. Ice cooled brownies with icing (below) if desired.
Icing:
2 cups powdered sugar
4 tablespoons cocoa
heavy cream or half and half
1 teaspoon vanilla
Sift powdered sugar and cocoa into a mixing bowl. Add vanilla and enough cream to be of desired spreading consistency.

Here's a recipe that my family of 4 loves!
Triple Fudge Brownies (tasteofhome.com)
3.9oz. box instant chocolate pudding mix
2-layer chocolate cake mix
12oz. semi-sweet chocolate chips
Prepare pudding according to pkg directions. Whisk in the dry cake mix. Stir in chocolate chips. Spread in greased 15x10x1 inch baking pan. Bake @ 350 for 30-35 minutes.
Very easy & delicious!

I usually just go with Betty Crocker - or Ghirardelli makes a good mix too! Just add eggs and oil or something like that!
