Easy Apple Cake:

4 apples, peeled and sliced
1/4 cup sugar
1/2 teaspoon cinnamon
SECOND STEP
1/2 cup sugar
2 tablespoons butter, softened or margarine
1 egg
1/4 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1. Preheat oven to 350 deg F.
2. Mix together 1/4 cup sugar and 1/2 t cinnamon.
3. Place a layer of apples in greased baking dish, sprinkle with half the sugar-cinnamon mixture, cover with remaining apples and cover with remaining sugar-cinnamon.
4. Cream 1/2 cup sugar and butter.
5. Add egg and vanilla and mix well.
6. Stir in flour and baking powder and spoon over apples, spreading it as best as you can.
7. Bake 30 minutes.
8. Best served warm, with vanilla ice cream.

Legacy Apple Cake
Makes 1 rectangular cake
This moist cake with apple chunks and brown-sugar frosting uses whole wheat flour, the sometimes bitter flavor of which is offset with cider. If you want a layer cake instead, this recipe also makes two 9-inch round layers, but you should double the frosting recipe.
CAKE
Butter (for the pan)
2 1/2 cups whole wheat flour (traditional or white whole wheat), plus more for the pan
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice, or 2 teaspoons apple pie spice
1 cup (2 sticks) unsalted butter
1 cup brown sugar
1 cup granulated sugar
3 eggs
1 teaspoon vanilla extract
1/4 cup boiled cider or apple juice concentrate
3 apples, peeled, seeded, and chopped
1 cup walnuts, chopped
1. Set oven at 325 degrees. Grease and flour a 9-by-13-inch pan.
2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and allspice or apple pie spice; set aside.
3. Using an electric mixer in a large mixing bowl, cream the butter with the brown and granulated sugars until light and fluffy. Beat in the eggs, one at a time, stopping between each addition to scrape the sides and bottom of the mixing bowl. Beat in vanilla and cider or apple juice.
4. With the mixer set on low speed, beat in the flour mixture until evenly moistened. With a rubber spatula, fold in the apples and walnuts.
5. Spread the batter in the prepared pan. Transfer to the oven and bake for 45 minutes or until a cake tester inserted in the center comes out clean.
6. Remove the cake from the oven and set on a wire rack to cool completely.
FROSTING
5 tablespoons unsalted butter
1/2 cup firmly packed brown sugar
1/4 teaspoon salt
3 tablespoons milk
1 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1. In a small pan over medium heat, melt the butter. Stir in brown sugar and salt. Cook, stirring, until the sugar melts. Add the milk, bring to a boil, and pour into a mixing bowl. Cool for 10 minutes.
2. Stir in confectioners' sugar and vanilla. Beat well; if the mixture seems too thin, add more confectioners' sugar. Use the frosting while it is still warm.

You can try this recipe out. It's easy, quick and delicious..... Everyone loves this at my house!
Ingredients:
2 cups unsifted flour
1 1/2 cups sugar
2 teaspoons cinnamon
2 teaspoon baking soda
1 teaspoon salt
1/2 cup oil
2 eggs, beaten
1/4 cup of your favorite coffee, brewed
1 1/2 teaspoon vanilla
2 1/2 cups peeled, sliced apples
1 cup chopped nuts
Directions
Heat oven to 350°F.
Mix dry ingredients in a large mixing bowl. Stir in wet ingredients and blend. Then stir in apples and nuts.
Pour into a greased and floured 9-inch tube pan.
Bake at 350°F for 60 minutes, or until cake tester comes out clean. Cool 10 minutes; remove from pan. Serve warm or cool, sprinkled with confectioners sugar.

INGREDIENTS
2 eggs
1 cup vegetable oil
2 cups white sugar
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda

4 cups diced apple without peel
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour one 9x13 inch cake pan.
Beat vegetable oil and eggs until foamy. Add the sugar, flour, ground cinnamon, baking, soda, salt, and vanilla and mix well. Stir in the diced apples. Pour batter into prepared pan.
Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes. Cool cake in pan for 10 minutes. Cake needs no frosting.

Ingredients:
1/4 cup butter
3 cups peeled, cored, and sliced baking apples (about 3 medium)
1/3 cup golden raisins
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
3/4 cup yellow cornmeal
3/4 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup butter, softened
1 cup granulated sugar
1 teaspoon vanilla
4 eggs
1/3 cup dairy sour cream
1 tablespoon milk
Sifted powdered sugar
Grappa Whipping Cream (optional)
Instructions:
Preheat oven to 350?F. Grease the bottom and sides of a 9-inch springform pan; set aside. In a large skillet, melt the 1/4 cup butter over medium heat. Add sliced apples and golden raisins. Cook about 8 minutes or until apples are just tender, stirring occasionally. Remove from heat. Stir together the 2 tablespoons sugar and the cinnamon. Stir sugar mixture into apple mixture. If desired, reserve a few apple slices for garnish; set aside. Set remaining apple mixture aside.
In a medium bowl, stir together cornmeal, flour, baking powder, and salt; set aside. In a large mixing bowl, beat 3/4 cup butter with an electric mixer on medium to high speed for 30 seconds. Add the 1 cup granulated sugar and vanilla and beat until combined. Add eggs, one at a time, beating well after each addition. Add sour cream and milk; beat until combined. Fold in cornmeal mixture.
Pour two-thirds of the batter into the prepared pan. Add the apple mixture, arranging evenly on top of the batter. Pour the remaining batter over the apples and spread evenly.
Bake about 40 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 20 minutes. Remove sides of pan and cool 20 minutes more.
Grappa Whipping Cream: In a chilled medium mixing bowl, beat 1 cup whipping cream, 2 tablespoons granulated sugar, and 1 tablespoon grappa or brandy using an electric mixer on medium speed until soft peaks form. Serve immediately or cover and chill until serving time. Makes 1 cup.
