Probably the scotch bonnet, or habanero pepper, is the hottest. To cut the heat, drink some milk. If you have too much in a dish, then make twice as much of it to add to the stuff you already made. Good luck!

Scotch bonnets or habaneros... the rule of thumb is the smaller and more vividly colored they are at maturity, the hotter they will be.
Heh. Brings to mind a nasty joke I played on my coworkers when I was single: I went to Colorado on vacation and came back with some hot sauce called 'A** Blaster'--it was all habaneros and capsicum (the chemical that makes peppers hot)--and just left it with the collection of hot sauces in the break room. A couple of months later, when all the hot sauce had been used up, one of the guys opened the bottle I'd left and liberally applied it to his lunch...
I had to buy his lunch (I'd already figured I would), but the look on his face when he took that first bite was priceless!

fresh bhoot jolokia from assam region of india is the hottest chilli in the world.it belongs to the Capsicum chinense family. this is official,the guinness book tested it and proclaimed it the hottest chilly in the world on 9 september 2006 in new mexico state university USA.
we indian's eat much more chillies than any mexican or spanish person i know. i have quite a lot of mexican friends and they are scared to have my chicken and lamb curries.
to cut the heat cold yougurt/curd is the best thing you can eat, try adding some chopped tomatoes and cucumber into it. trust me you would never go for a glass of milk to calm your burning tongue again.

Homegrown habaneros. My lip started bleeding just from a drop of the juice! The only thing that even came close to taking the edge off of it was punching myself in the head to distract myself from the pain of the pepper. It was not fun.

The first two may be correct. We used to eat peppers at work and this guy from Jamaica brought some Scotch Bonnets, Whoooooo, Dang, whoe turn red and run for ice water, those things this fire you up! We thought one guy was going to the hospital!!! Heck, I gave one to my girlfriend at the time, It was so Hot (If you understand it) we not have sex for three days. Put Blisters on my love stick. :-p

Habanero, it doesn't matter if you are latina or latino, anyone can handle the heat. And milk is not the best for spiciness. Try eating bread. It absorbs the heat in your mouth.
