What kind of cheese has the least calories and lowest fat without actually being low-fat?

Ricotta and farmer's cheese (harder to find), and non-fat cottage cheese.
The other cheeses you mentioned are much higher in fat. Every food in the US has to have a nutrition label. Almost at the top is a calorie count-per-serving, fat content with a breakdown into fat, saturated fat, and trans fat content (the worst for our health), and a lot of other things you need to know to be able to make healthy food decisions. Use this to compare similar foods, like cheeses. to each other.

Low fat ricotta or low fat cottage cheese, both are good sources of protein. Whilst it is important to include dairy products in your diet cheese is generally high in saturated fats and something you want to try and avoid when dieting, and only eat in moderation other times.

Cottage, which doesn't taste like real cheese to me, but can be improved by mashing with (sardines in water; drained) & balsamic or cider vinegar/lemon juice and/or sweet chilli sauce. Blended avocado, as a vegetarian alternative, with lemon juice & pepper. Ricotta cheese is good, low fat, and can even be used in cheesecake, and has a much better taste.
