That part of the mass is the Liturgy of the Eucharist. The specific lines about "take this, this is my ____" is called the conscration.
EDIT - oh heck, I'm sorry, I misread... I thought you wanted to know WHAT it was called. There are four Eucharistic Prayers; the actual words of conscration are the same in all four, but the text surrounding them differs a bit. Since you've been away so long and this knowledge has yet to trickle down to the laity within particularly the American Catholics here is information you need to know.
The correct form of saying the words of consecration is:
"For this is the Chalice of my Blood of the New and Eternal Testament, The Mystery of Faith, which shall be shed for you and for MANY unto the remission of sins."
Notice that the words "for all" should be "for many".

"for all" is used only in the Novus Ordo Missae All apostolic liturgies of East and West have the clear "for you and for many". (pro multis) It only is the Catholic form for the sacrament and probably even the only valid form for the Sacrament.
Note: the Polish and French version of the Novus Ordo do not contain "for all", but "for many" in their vernacular (native language) versions, Chinese also has 'wei zhong ren' (for many).
This is found only within the English speaking countries, (and Dutch, etc) Unfortunately they've bastardized the very substance of the words of consecration.
The words are not to be silent. Usually, they seem silent because there are people shuffling around, crying babies, fans going, and they are indeed said very softly, in a low tone. This is to emphasize the sacredness of the words, the act, and the moment. I have heard the priest say the words a few times, but usually, even sitting close to the front in my church, I cannot hear. It is not necessary to hear them, and we are not there for the "show" of the Mass, but to worship God. All that matters is that they are said, and it is better to say them very quietly and reverently. This is why the entire canon is pretty much silent, because it is so revered, so sacred.
