The best way to learn about the Bible is to read the Bible. A good commentary would help as you go along, or using a good study Bible will help.

First get a good King James Version Study Bible and read it and study the Bible. Then here are some good books
"Spiritual Warfare" by Derek Prince
"Blessing or Curse" by Derek Prince
"The Kneeling Christian" by Clarion Classics by Zondervan
I like anything written by Kay Arthur, Mike Murdock, Joyce Meyers.
"A More Excellent Way" by Henry Wright is excellent
Get you a Holman Bible Dictionary and read it also.
I've read "Josephus" and books on the "Dead Sea Scrolls" and done Kay Arthur's Bible Study course. I like anything written by Charles Stanley, John Hagee, Jack Van Impe, Perry Stone and Ed Hindson.
Gary Stearman and J.R. Church are two of the sweetest gentlemen that you will ever know. Whenever you can listen to Prophecy in the News and get their magazine. It is great.
For pure fun and entertainment listen to Louisiana man, Jesse Duplantis. He will bring joy to your heart and strengthen your faith in God. Get some of his tapes. They help bring people into the knowledge of God while at the same time laughing. Jesse is a very light hearted speaker and non-believers warm up to him. What a blessed man!
If you are interested in apologetics "Fast Facts on False Teachings" is a good book by Ron Carlson & Ed Decker.
A Strong's Concordance of the Bible is the best asset to the Bible for learning all scriptures pertaining to a certain subject.
Also, just out is the New Subject Bible which is great.

I also attend a Non-demo church. I recommend Zondervan's Life in the Spirit Study Bible in KJV. (It will have a dove on the cover)
If the Christian Bookstores don't have it you can special order it or get it off Amazon.
From there, you can pray for God to lead you into other study materials. Peace and Blessings :)

Look for The Book Of Enoch, written about the same time as the old testament but not included in the bible. Also try The Story Of Adam an EVE, written at about the same time, these books should give you more clarity on the angelic race, and man's true role and God also.

If you want good critical looks at the bible, I would recommend the works of either Episcopal Bishop John Spong or Randel Helms. Both present views of the bible which look at it as the collected work of communities of believers in historical context rather than the dictated word of god.
Two representative book links are below.
