I'm totally out of regular milk (out of the gallon jug) and need 1 cup of milk in a recipe (hamburger helper). Can I use Evaporated milk out of the can?

Yes. And don't dilute it with water. I use evaporated milk very often in cooking for the simple reason that it improves the taste. Once you've tried it you'll use it in almost every thing calling for milk.

You sure can!!! And the dish will be a lot richer tasting.......Next time you make "from the box" mac and cheese (think of the familiar blue boxes) try subbing out the milk for evaporated milk...........You'll be pleasently surprised.....I keep evaporated milk on hand, as it's shelf stable and can be used in a pinch.........Different story in my coffee, tho......LOL.........only 1/2 &1/2 there.......Enjoy!!!

Yes, mix 1 to 1 water with the evap milk - keep in mind it will / does have a stronger flavour and you might want to water it down even more.

I think you can, just add water (look at the can to see the ratio of water to evap milk)
