Here is one that my Dad found. Be VERY careful it can get out of control with the Jalapenos! But boy is it good!

El Cid Chili

• 2 tablespoons olive oil
• 2 pounds sirloin steak, cut into 1-inch cubes
• 1/2 pound ground beef
• 12 ounces chorizo sausage, casing removed, cut into 1/2 cubes
• 1 large yellow onion, coarsely chopped
• 1/4 cup chili powder
• 1 tablespoon garlic salt
• 2 teaspoons cumin
• 1 teaspoon dried basil
• 2 (14.5-ounce) cans beef broth
• 2 (14.5-ounce) cans whole tomatoes, drained
• 1 cup cilantro, chopped
• 1 cinnamon stick
• 3 bay leaves
• 2 green jalapenos, slit lengthwise 3 times each
• 1 tablespoon yellow cornmeal
• Salt and pepper, to taste
• Garnish with Cheddar and sour cream
Method:
Place oil in a large, heavy pot over medium heat. Brown the sirloin in batches. Remove to a bowl with a slotted spoon. Add ground beef, chorizo and onions to the pot and brown. Make sure to break up the meat. Return sirloin to the pot. Stir in remaining ingredients, except for garnishes. Cut three slits in each pepper from top to bottom but not all the way through to the bottom. Bring to a boil, reduce heat, and simmer for 2 hours. Stir occasionally, breaking up tomatoes. Before serving, discard cinnamon stick, bay leaves and jalapenos. Garnish, if desired.

Chili:

I love to make this its yummy!

2½ hours 20 min prep
8 servings

2 lbs ground beef
1 large onion, chopped
2 cloves garlic, minced
2 cans tomato sauce
1 can tomato paste
1 (15 ounce) can tomatoes
1 teaspoon cumin
1 teaspoon paprika
2 teaspoons chili powder
1 teaspoon oregano
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Worcestershire sauce
1 can chili beans

1. Saute meat, onions and garlic until done.
2. Add remaining ingredients and simmer for 2 hours.

Chili con carne, you can find a recipe for it in most cook books. or on line. you will need, 1lb of lean minced beef, a little veg' oil, 1/2 red and or yellow pepper chopped and deseeded, 2 medium onions copped, 2 cloves garlic finely chopped, 2 tspns chili powder or more to taste, 1/2 tsp dried oregano, 1/2 tsp ground cumin, 14oz can chopped tomatoes, 1/4 pint of beef stock, 14oz can of red kidney beans, drained, salt and pepper. brown mince in pan, add onions and garlic, then add other bits and cook for about 15 min's.
Serve with boiled rice. Tasty.
Slow cooked chili pork.
Or Chili beans and pork,
500g of minced pork, or pork sausages,
Tin of baked beans, or chili beans*, or red kidney beans*,
tin of chopped tomatoes,*
One large onion chopped,
Chili powder or sauce to taste,
1/2 pint pork stock,
One sliced red pepper*,
2 or 3 large potatoes.
brown the mince and onions in pan, place into slow cook pot with other ingredients, except potatoes.
Slice potatoes, place in layer on top. Cook on medium for 4-5 hours. Potatoes can be replaced with cooked pasta.
Eat in evening when home from work.

yes! i made some chicken (seasoned w/ cayenne pepper, garlic salt & taco seasoning) w/ roasted chiles (the kind you use to make chile rellenos) & onions the other night. topped it all off w/ some sour cream in the pot & it was delicioso!
