I love this one - Chicken w/40 cloves of garlic. I know it sounds crazy to have 40 cloves, but it turns out really nice.
3 whole heads garlic, about 40 cloves
2 (3 1/2-pound) chickens, cut into eighths
Kosher salt
Freshly ground black pepper
1 tablespoon unsalted butter
2 tablespoons good olive oil
3 tablespoons Cognac, divided
1 1/2 cups dry white wine
1 tablespoon fresh thyme leaves
2 tablespoons all-purpose flour
2 tablespoons heavy cream
Separate the cloves of garlic and drop them into a pot of boiling water for 60 seconds. Drain the garlic and peel. Set aside.
Dry the chicken with paper towels. Season liberally with salt and pepper on both sides. Heat the butter and oil in a large pot or Dutch oven over medium-high heat. In batches, saute the chicken in the fat, skin side down first, until nicely browned, about 3 to 5 minutes on each side. Turn with tongs or a spatula; you don't want to pierce the skin with a fork. If the fat is burning, turn the heat down to medium. When a batch is done, transfer it to a plate and continue to saute all the chicken in batches. Remove the last chicken to the plate and add all of the garlic to the pot. Lower the heat and saute for 5 to 10 minutes, turning often, until evenly browned. Add 2 tablespoons of the Cognac and the wine, return to a boil, and scrape the brown bits from the bottom of the pan. Return the chicken to the pot with the juices and sprinkle with the thyme leaves. Cover and simmer over the lowest heat for about 30 minutes, until all the chicken is done.
Remove the chicken to a platter and cover with aluminum foil to keep warm. In a small bowl, whisk together 1/2 cup of the sauce and the flour and then whisk it back into the sauce in the pot. Raise the heat, add the remaining tablespoon of Cognac and the cream, and boil for 3 minutes. Add salt and pepper, to taste; it should be very flavorful because chicken tends to be bland. Pour the sauce and the garlic over the chicken and serve hot.

take bonless skinless chicken breast and put in a pan with about 2 tblsp oil and brown on both sides. Remoce chicken from pan an add a chopped onion and saute about 5 minutes put chicken back in the pan and add 1/4 cup red wine or red cooking wine and cook about 4 minutes turning the chicken once the chicken will turn pink as it picks up the flavor and then take your favorite jar sauce and add it to it and cook through in the mean time boild some pasta and serve your sauce over your pasta with parm cheese a nice salad and rolls or bread sticks it is very yummy and it is so easy. You can also do the same thing minus the chicken and do it with frozen vegetables the best one for this is califlower or broccoli

Forget the lemon pepper. Try this. It's easy and delicious
Stuffed Thighs
Ingredients
Nonstick cooking spray, oil or butter
6 boneless, skinless chicken thighs
freshly ground black pepper
6 half-inch thick sticks of Swiss Gruyère cheese
3 slices air-cured salted ham [Serrano or Prosciutto], cut in half, or an equivalent amount of country ham
3 fresh sage leaves, halved
coarse salt
1/3 cup freshly grated Parmesan cheese
1/3 cup dried breadcrumbs [not fresh]
2 tablespoons unsalted butter, cut into 6 pats
Method
Heat oven to 350°
Spray, oil or butter a baking dish large enough to hold the 6 thighs snugly.
Wash the thighs in cool water, then pat them dry with paper towels. Lay each thigh flat on a cutting board, sprinkle with pepper, and put a stick of cheese, half a slice of ham, and half of a sage leaf in the center of each thigh. Roll the thigh meat around the filling. Place the little parcels seam side down in the baking dish. Sprinkle the tops with salt, pepper, Parmesan and lastly the breadcrumbs. Top each with a pat of butter.
Bake for 25 to 30 minutes, switch the oven to “broil” for the last few minutes if you desire to brown the tops.

Take some boneless skinless chicken breast halves and soak in dale's sauce for about 30 minutes. Line a pan with aluminum foil and preheat oven to 375. Wrap a slice of raw bacon around each chicken breast and secure through the middle with a toothpick. cover pan with aluminum foil and bake for about 40 mins or until done. My whole family absolutely loves this!! Especially my meat eating picky husband.

I have a great recipie for chicken cordon blue, Start with large peices of skinless boneless chicken, pound you chicken breasts flat, Then take cream cheese and spread on the rough side of the chicken. Then take any kind of sliced ham you like and cheddar cheese, and layer it over the cream ch. Then roll the chicken breast up with your cheese and ham inside, wrap it with a peice of bacon and use a toothpick to hold it. Then get the parmesean shake and bake, put it in a bowl and roll your chicken in it until well coated. Put it in some aluminum foil and bake about 1 and a half hours on 350 degrees. Sure to be a hit try it!

I make chicken enchiladas for my very picky husbank. All you need are chicken breast, tortilla shells (burrito size), seasonings, cream of mushroom, sour cream, cooking spray, rotel sauce (or chilis and tomatoes), and cheese. Season the meat how you want it and cut it up in pieces. The cream of mushroom, sour cream, rotel, and some cheese goes into a pot to be cooked and combined together. This is your sauce. Spray cooking oil inside the pan. Inside each tortilla shell, spoon some of your sauce the put some of the chicken inside. Roll it up and place in pan, seam down. Continue until all meat, shells or space are gone. Pour remaining sauce on top and top with cheese and stick in oven. When cheese is melted, its done. Enjoy!!

First of all, tell your boyfriend to put on an apron and head to the kitchen to make a meal or two! Secondly, don't cry if he doesn't like it, he can go out and get a burger or take you out to dinner too! Third, here are some ideas:
1. Marinate chicken pieces overnight in Italian Dressing for all recipes.
2. Stirfry: cut up chicken breasts, saute in large skillet or wok with sliced red bell pepper, diced carrots, celery, mushrooms, bean sprouts and bamboo shoots. Add some teriyaki sauce and serve over jasmine rice.
3. Baked chicken: put chicken pieces in baking dish and add quartered artichoke hearts (from can, drained) and sprinkle on feta cheese. Cover and bake at 350 degrees for 55minutes. Take cover off during last 10 minutes of cooking to brown chicken slightly. Serve with rice pilaf and green beans with lemon zest.
4. Oven fried chicken: dip chicken pieces in egg mixed with water, then bread crumbs mixed with parmesan cheese. Place in baking dish and dot with butter. Bake until chicken is crispy on the outside and juices run clear. Serve with mashed potatoes and peas.
5. Pork Roast: Make a rub of 1 T kosher salt, 1 tsp fresh ground pepper, 1 T sage and rub over entire surface of meat. Place in glass baking dish and add 1/2 cup white wine in bottom. Bake at 350 degrees for 1 1/2 hours (3 -4 pound roast). Baste every 20 minutes with melted butter mixed with garlic and wine. Let rest when finished for 15 minutes (roast will continue to cook). Serve with garlic/sour cream mashed potatoes and spinach salad.
You might want to look for a series of cookbooks called "Taste of Home". They have simple, satisfying recipes that are easy to make and taste great!

That's a good idea. I mean the lemon pepper not crying(Smile). You might try broiled chicken, and present it on a bed of noodles with vegetables. Ask him what he thinks he would like. I'm picky too, but its better to ask then to keep getting your feelings hurt. I commend you for trying though, good luck.
