1. Use regular long grain rice that's been cooked ahead of time and allowed to cool (sort of like making good fried rice).
The the rice is cooled the starches gelatinizes which makes it less sticky.
Also, add the rice at the end since it's already cooked. You're just heating it up.
2. You can also use converted rice, Uncle Ben's. That rice has been precooked and some of the starches are removed, which means less sticky.

I make chicken and rice soup at work all the time. I use long grain or a long grain and wild rice blend. If the rice is turning to glue are you sure there is enough liquid? I always cook the rice in the soup. Try a different bag of rice, maybe its the quality of the rice that you are using.

I love to cook and I use a lot of rice. I would honestly try a quick cook rice like minute rice and add it shortly before serving it. If you want to add a little extra flavor, you could try a little wild rice at the beginning, but since you cook at a school and wild rice can be pricy, that might be hard to do. The quick cook rice tends to be a little less starchy though and since it doesn't sit as long that should help eliminate your problem. I really hope this helps. Good luck to you and happy cooking.

you should try using a wild rice. regular rice will turn into mush if it asorbs too much water. what kind of rice are you using by the way? wha tyou can do is put the rice in after when the soup is almost ready. figure out how long it takes to cook that rice till its perfect. and minus that time before the soup is 100% done. this way the rice should come out fine. but usually the case is because the rice is being cooked in the same time and when they get hot they asorb alot of fluid so they get puffy and mushy. try it out first. just a suggestion.

Basmati rice or Uncle Ben's brand long grain. These two just seem to work the best. But wild rice does ok, too.

I use short-grain Rose rice... so that it DOES turn into a starchy mess !!
Wild Rice will not turn into glue... nor a GOOD long-grain rice.
Good luck

a good tip: rinse it well before cooking. It will take out the starch out ans make it much less stick. Additionally you can cook it separetely and add it at the end.
