if Iyou have potatoes of any kind (whole, shredded, hash browns, tater tots, etc.) you can mix the potatoes and ham with 2-3 cups white sauce in the crock pot, lay the cheese slices over it and cook. i do this alot and it's quite tasty, especially with tater tots.
Recipe for white sauce:
4 tablespoons butter,
4 tablespoons flour,
2 cups milk.
Melt butter, and then mix flour into melted butter.
it will be a thick white sauce you ca use as a base for alot of sauces.
(for 3 cups sauce you would need 6 Tbs. butter, 6 Tbs. flour, and 3 cups milk. For 4 cups white sauce you would need 8 Tbs. butter, 8 Tbs. flour, and 4 cups milk)

you can make scalloped potatoes
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
Salt and pepper
1 tablespoon butter
2 medium onions, thinly sliced
4 large russet potatoes, peeled and thinly sliced
12 ounces 1/4 inch sliced baked ham
2 cups grated cheddar cheese
Preheat oven to 350 degrees. Butter a baking dish. In a saucepan, melt 2 tablespoons butter over medium high heat. Stir in flour and cook for 1 minute. Remove saucepan from heat and whisk in milk. Return pan to heat and bring to a simmer while stirring. When sauce has thickened remove from heat, season with salt and pepper and set aside. In a skillet, cook onions in melted butter until golden brown. Season with salt and pepper. Spread 1/3 of the white sauce in bottom of baking dish and top with half of the potatoes. Spread out half of the onions, ham, cheese And another third of the sauce. Season with salt and pepper. Continue layering ingredients, ending with the remaining cheese on top. Bake for 45 minutes or until golden and bubbly.

HAM CASSEROLE
2 c. (or more) cut up left over ham
1 can niblet corn
1 can cream of mushroom soup
Salt & pepper to taste
1 tsp. prepared mustard
1 tsp. minced onion
1 tsp. Worcestershire sauce
1 c. coarsely crumbled bread crumbs
Butter
Mix all ingredients except bread and butter together thoroughly. Place in casserole dish. Cover with bread crumbs. Dot with butter. Bake at 350 degrees for about 20 to 30 minutes. Makes 4 to 6 servings.

You can add it to eggs and make a nice omelet or you can add it to salad. You could also make a ham salad, just take the ham and add mayo, celery, carrots and maybe a splash of red wine vinegar toss together and serve alone or as a sandwich option or even with crackers.

I like to throw diced ham in those boxed Betty Crocker Potato products... perhaps some raw brocolli stirred in after cooking.

Slice peeled potatoes and a can of Cream of Mushroom soup. You can add onions, pepper, thyme or your favorite spices. Bake in a covered dish @400 degrees until the potatoes are tender. (about an hour) I also do this in a crock pot on low all day when I go to work.

if you have macaroni or rice, you could make a casserole, and lay the singles on top to make a melty crust. put the ham with the rice and maybe add some brocolli.
or you could make a cold pasta salad with ham, italian dressing, tomato, bell pepper, etc ... and have grilled cheese with it.
