We've heard that melting ice caps will drown out many currently inhabited cities along the coastlines - but will it do anything else - like change the gravitational pull, or shift the way the earth spins, or change the polarity of magnetics or something? Is flooding the worst thing that will happen?

No, the only things that we know could drastic (3 or 4 degrees) change the tilt of the Earth are the Milanckovitch cycles, super continents slipping from the equator to the poles, or major meter impacts. Ice is not heavy or energetic enough to really make a difference.

No the water is part of the balancing of the earths spin. Take a glass of water and fill it with ice and top it off with water, now watch it melt does the water level increase???

Nope ... no change. The people in the know say a 1 foot rise in sea level over about 3 centuries. Nothing more.
