In ASME the metals are classified by their P-numbers . here what does the letter P stands for?

The P numbers each represent a TYPE of material (i.e. low carbon steel, stainless steel, copper, etc.) based upon the materials composition and mechanical properties. A P number is a method of classifying materials. Each ASME material has a P number classification, and each P number classification has its own requirements for welding and heat treatment.

It is used mainly to specify requirements for joining (welding) metals, in order to guarantee that when the same or different materials are welded together, that the joint will be as strong or stronger than the base metals. It can also be used to specify requirements for heat treatments.
