Here's the recipe I use, which goes back to my immigrant Italian grandmother.

Preheat oven to 350 degrees. Grease a 9 x 11 pan.

Take several pieces of stale (or the oldest you have) bread, hot dog buns, whatever.

Break apart into bowl and add milk, enough to moisten the bread very thoroughly. Add about a pound of ground chuck. (a little more is okay.) Add one egg, and salt and pepper to taste. Mix it all together. Of course the real Italian way is to do it with your hands! It also works the best, but whatever.

Using your hands, form into meatball shape. They will probably feel very mushy, but that's why they end up so fluffy. Place on prepared pan. I usually get a dozen on a pan, using rows of 3 and 4 meatballs.

Bake. I check after about 25 to 30 minutes, and they are usually done by then. They will not be totally round. Remove from pan and either serve, or add them to the sauce for the last 10 minutes of the sauce simmering.

These are light as a feather and incredibly juicy. I've tried to write the recipe clearly and with my comments, so it looks longer than it really is. This is fast. You can get meatballs on the table in about 50 minutes.

You can freeze these either after they are done, or raw after they've been formed. Very handy!

Enjoy!

Mama’s Spaghetti Sauce and Meatballs

Who doesn’t love a Saturday night meal of good ol’ spaghetti and meatballs? The secret to the sauce lies in the flavorful meatballs made with 3 kinds of meat.

Serves 8

3 (23-ounce) cans good-quality tomato sauce
1 (5.5-ounce) cans tomato paste
1 onion, finely chopped
1 green pepper, finely chopped
1 clove garlic, minced
2 tablespoons Italian seasoning
1/2 teaspoon pepper
1/2 teaspoon salt
1/3 pound ground beef
1/3 pound ground veal
1/3 pound ground pork
1 egg
1/4 cup Italian-style bread crumbs
1/4 cup fresh-grated Parmesan cheese

Combine the tomato sauce, tomato paste, onion, pepper, garlic, Italian seasoning, pepper and salt in the slow cooker.

In a large bowl, combine the beef, veal, pork, egg, bread crumbs and Parmesan; form into balls.

Transfer the meatballs to the slow cooker.

Cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours.

1 lb of lean ground beef
1 egg yolk
1/4 cup of milk (or chicken broth whatever you like)
1 cup of bread crumbs (I use italian)
Sprinkle all purpose seasoning all over (maybe 1/2 tbsp)
or if you don't have all pupose seasoning like Adobo you can use salt and pepper just sprinkle it on

Shape into little balls and bake at 400 degrees for 15-20 minutes to check on them take out of the oven and cut one in half to make sure there is no pink inside. If there is then cook another 5 minutes. WHen done add them to spaghetti with your fav sauce.

Good Luck! ;-)

1/4 pound sweet Italian sausage, casing removed
1/2 pound ground beef [not lean]
1/2 pound ground pork [not lean]
2 whole eggs
1/2 cup freshly grated Pecorino Romano, plus additional for serving
1 tablespoon fresh oregano, chopped, or 1 teaspoon dried
1 clove garlic, minced fine [see Cook’s Note]
1 large shallot, minced fine [see Cook’s Note]
1 cup dry bread crumbs [Progresso “Italian Style” recommended]
1/4 cup milk

Use your hands to form meatballs by mixing sausage meat with ground beef and pork, eggs, cheese, oregano, garlic and shallot. Add bread crumbs and incorporate fully. Add milk, drop by drop, until mixture is moist and holds together. Form into balls.

Heat oil in a large pot or 12 inch skillet and fry meatballs in batches, browning all sides. Remove to paper toweling to drain.

Arrange drained meatballs in your favorite red sauce and simmer 20 minutes, or bake at 350 for 20 minutes until thoroughly cooked.

mincemeat, salt and pepper

Mix it all up, roll into little meatball sized balls, fry off until golden brown (do not mess with them when they are frying or they will break up), plonk them in a tomato sauce and cook until you need them

Just looked back at these answers and have noticed a sad individual has gone down the list and marked us with a thumbs down. very mature.

Just roll thawed hamburger into balls. Pour a little bit of oil in a frying pan and place balls in pan. Cover the pan and let fry until you see the bottoms start to brown. Uncover and rotate the balls so the top of them is now on the bottom. Recover and continue to fry until the are browned all the way through. You can add seasoning to them if you'd like.

And yes, You can brown them in a pan, then cook them in the oven. Basically, it's until you can cut one in half and it isn't pink. About 20 minutes approx, but add a little sauce to the pan so they don't get too brown or stick to your baking ware.
Have a great dinner!
