Egg and Sausage Frittata:
6 eggs
2 cups milk
1 lb Italian sausage, casings removed
1/2 yellow onion, diced
1 pkg. frozen hash browns
1 pkg shredded italian cheese
1 tsp salt
1 tsp pepper
1 can diced green chili's
Blend eggs with milk. Saute onion with Italian sausage until cooked, add green chilis. Add hash browns. In baking dish, place sausage mixture and top with cheese. Mix salt and pepper with egg mixture. Pour over potatoe and sausage mixture and top with more cheese. Bake at a 350 degree oven for 45 minutes or until firm.

OK...oatmeal was my first choice, but I'll go on to choice #2.
Boil up some eggs and have a couple of them in the AM and a banana. AND they are portable.
Cottage cheese, 1/2 cup with fruit or fruit juice.
Scrambled eggs with cheese, you can do this in the microwave and wholewheat toast. Or make a sandwich.
SPICEY!! Hey, how about making yourself some healthy snack mix with whole wheat squares (shreded wheat), Chex, nuts, popcorn. Put them in a bag, put in some worchester sauce, garlic powder and any kind of seasoning you like (In New Orleans we use Tony's) and "heat it up" all you want. Grab a sandwich bag and load them up for every morning. Portable too. Great snacks.
You can't go wrong with one dairy, one grain, one or two proteins. That will hook you up for the morning. You might also consider taking along a snack between breakfast and lunch (rasins, nuts, snack mix) to give you even more punch during the day and you won't get hungry. Godloveya, honey.

I need to prepare my breakfast the day before as well since I start work at 7 or 6 am. I wouldn't want to be preparing at 4:30am. The first recipe I've made several times. As soon as it's cooled off I cut it into pieces and pack it into tupperware and place it in the refrigerator or freezer. That way it's just grab and go. When I get to work I can throw it in the microwave if I want to eat it hot otherwise it tastes just fine at room temperature too.

I cook up homemade sausage and bacon that my brother gets for me and keep it in Tupperware in the fridge. Then in the mornings I can slap it on an English muffin with eggs fried, scrambled (and sometimes hard boiled kept in the fridge to make it even faster). Then I heat in microwave and eat it up. If you can get homemade sausage and bacon, it is lean and healthy and not like that false cra&ppy stuff in the store. But for real lazy go to frozen counter and get those prepared breakfasts you just heat. I also use homemade butter when having homemade sausage buscuits for my breakfast. I have lowfat milk or V8 juice with breakfast. By eating natural and homemade instead of that chemical enhanced sh&it from the store, I can monitor portions and weight is always perfect and Doctor's tests are perfect.

Easy Crust-less Spinach Quiche- make ahead-eat all week long.
olive oil
1/4 cp onion diced
3-4 large mushrooms sliced
16oz bag frozen spinach
3 eggs
1 cp fat free half and half
cheese of choice- about 3-4 oz
Parmesan for sprinkling on top- if desired
Saute onion and mushroom in olive oil. add spinach until heated through (about 5 minutes, with a lid on). in a separate bowl beat the three eggs, half and half, and cheese.
When spinach is heated through, dump into bowl with eggs. Mix it all together and then pour into a pie tin or round cake pan (sprayed with cooking spray). Toss Parmesan on top if using. Bake at 350 for 20 minutes.
Keep it in the fridge and cut yourself a slice every morning...makes 6 servings. Add a little hot pepper sauce if you want to spice it up. Microwaves great.

awww i feel ur pain a good meal easy to make and yet something healthy to start the day with i'm a big health nut lol love to keep a nice trim body means eatting well so I think for u try this
buy big 32 oz thing of yogurt and buy some fresh strawberries and or blueberries and some nature valley bars
take a cup and pour some yogurt in then some fruit as much as u want then more yogurt and then crumble up a nature valley bar on top for granola and there u go a nice light and healthy parfait
heres some other ideas
buy blue berry muffin mix and make muffins using skim milk light butter and light everything instead of the usual and try for fat free blueberry muffin mix make the muffins and have them sitting ready to be eatten and good enought to take with u and go
or
buy special k waffles use toaster cook them well and add sugar free log cabin syrup on them and ur good to go
or
try making a big fruit salad night before with pineapples grapes kiwi mango etc. and put in close container in refridgerator and ready just serve in a bowl or cup and ur good to go
try buying cereal like cheerios my favorite and or something with more carbs and cals but good for u as well raisin brand and add skim or 1 or 2 percent milk to it and use splenda to give it a kick and makes the milk tasty too lol yum

I make my husband a lot of breakfast sandwhiches that can be refrigerated or frozen. Depending on the ingredients you use, they can be relatively low-calorie. I can make a bacon, egg, and cheese muffin sandwhich with about 335 calories, but you can mix it up and use all kinds of meats and cheeses. You can use bagels too but you have to be careful what kind of bagel you use as some bagels (the larger ones) have as many as 300 plus calories. If you do make a breakfast sandwhich I recommend putting a low-fat butter spread on the bread--it makes the sandwhich much more flavorful.

How about a bowl of yogourt [ any flavor ] sprinkled with granola and berries. It's quick and extremely good for you and tastes fantastic. You can also make up a whole batch of pancakes on the weekend and keep them in the fridge or freeze them. Pull them out and microwave- good to go. Leftover pizza is good too! Good luck.

Omelettes are always good, just add any kind of peppers, meats and cheeses you like and they don't take a lot of time to make.
