Try this very easy, and very good recipe for fluffy Buttermilk pancakes that I use alllll the time.
1 1/4 cups all-purpose flour
1 egg
1 1/4 cups buttermilk
1/4 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup cooking oil
1 pinch salt
1. Preheat a skillet over medium heat.
2. Mix all of the ingredients until smooth.
3. Melt a little bit of butter in the pan.
4. Pour the batter by spoonfuls into the hot pan, forming 5-inch circles.
5. When the edges appear to harden, flip the pancakes.
6. They should be golden brown.
7. Cook the pancakes on the other side until they are also golden brown.
8. Enjoy.

I'm not home right now, but I use Bisquick or Krusteaz. SOme times my own mix. The recipes are on the boxes. But with Bisquick it's 2 cups of Bisquick, some milk and 1 to 2 eggs. Also 1 Tablespoon oil. It only asks for oil if you're making waffles, but beleive me, oil is needed anyway, wether you make pancakes or waffles. With Krusteaz, you don't need eggs.

1 cup flour
1 cup milk
a teaspoon vanilla extract
1 egg.
a teaspoon baking powder.
You can also add whatever you want. I'm a big fan of chocolate chips and bananas or apples and cinnamon, or bananas and walnuts. Basically, whatever you like, add to this recipe.
Mix in a mixing bowl, and turn your stovetop on. Get a skillet, and some sort of non-stick thing, like spray, or an oil, or butter, and coat the skillet with that.
Once it's heated up, depending on how fast you want these done. I usually do a medium heat so you can do other stuff. If you heat it higher than that, you have to watch it carefully so it doesn't burn.
pour/ladel onto the skillet your mix, and be careful to watch the edges of the pancakes. Once they start to bubble through on the edges or when the oil/butter/spray stops bubbling on the sides, and it starts to look matte on the edges as opposed to glossy like wet batter, then it's safe to flip it. You kind of have to guess how much time the other side will take, but it will take less time because the pancake is already mostly cooked.
Viola!

Take some help from the grocery store but add your own twist. My recipe
Pancake mix (Mrs Butterworths is the absolute best IMO)
2 ripe bananas (1 sliced)
1 sm. pkg of crushed pecans
1/2 t. vanilla extract
warmed Maple syrup (splurge a little and get one of the ones in a glass bottle)
Butter
Can of Reddi Whip (optional)
Preheat your griddle to 350 or a skillet to medium heat. Prepare pancake mix as directed.
Add half the pkg of crushed pecans (to taste) to batter
Add vanilla to batter
Mash up one banana (use less if you are making just a few pancakes, I use one banana for 16 pancakes) add it to the pancake mix and stir with a whisk or beat on low for 20-30 seconds
Place batter on skillet. Pancakes should only be cooked once on each side. So wait until the uncooked side is covered in bubbles that begin to burst. Flip and cook on the other side for a minute or so. Lift to check doneness of other side.
Spread butter on warm pancake add some crushed pecans and banan slices. Put a little whip cream on the top and drizzle with warm maple syrup
Finally, enjoy and plan to make them again!

Country Farm Home Made Pancakes
This recipe is over 100 years old.
2 cups of flour
2 eggs
1 Cup of Regular Milk or Buttermilk
1/4 cup of sugar
1 tsp of cinnimon
1/4 cup of Canola Oil
2 heaping tbs. of Baking Powder
If too thin add more flour. If too thick add more milk. Make into a batter consistency.
Grease a griddle and heat to medium heat, then put 1/2 cup of batter in griddle and wait for it to rise a little, lift up to see if brown and turn over. Brown on other side and make a pile of pancakes. If they get cold, just put in microwave for `15 seconds to reheat. Serve with syrup and butter. Enjoy
