they say that liver is responsible for filtering junk in a body, so when you consume beef liver it has filtered junk that a cow eats and then you consume it, so in essence you are consuming the junk a cow had eaten...is this true?

Not true, the liver is active in the formation of certain blood proteins and in the metabolism of carbohydrates, fats, and proteins. Kidneys do what you described in your question.

Liver has the highest content of the B vitamin group known.

You are what you eat, but it is not as bad as you think.
when a mammal eats, the eaten suff goes into the digestive tract where the nutrients and water are absorbed into the bloodstream, the bloodstream takes the nutrients to the different cells of the body. impurities from eating or through cell metabolism are collected by the kidneys and excreted through urine.

The liver is basically factory that makes digestive enzymes and metabolizes certain chemicals, it is not a "filter" in the sense that it catches and holds lumps of bad stuff. So If you like the taste of liver, go ahead and eat it once in a while, it has lots of vitamins but is high in dietary Cholesterol.

the liver filters the blood.of toxins. eat it if you want. but be aware the liver filters out the pollutants that the animal endures all day everyday. air pollutants, water pollutants, heavy metals and toxic chemicals of food processing. kinda like eating the dirt of a toxic waste dump. but go ahead and pile some onions on it and dig in if you want, too many people on the planet anyway, we need to get rid of some, but don't come begging free medical care, you have been warned.

No that is not true.Our body has enuogh resistanceto over come entry of harmful substances. Liver is responsible for digestion .

I know for a fact that all organ meats contain a concentration of toxins. Though organ meats are considered "good" for you because of the high amount of iron and protein, they can also "poison" you with impurities. So, in a way, you work companion is correct.
