I always use cottage cheese in mine :) IF i have a couple exttra dollars that week I will mix cottage and ricotta with an egg to bind the mixture. Also I will mix an italian blend of grated cheese (mozarella, parm, asiago) with the wet cheeses to thicken the mixture. Always top it with the mozzarella and parm. Cant have too much cheese!

Cottage cheese works great, as well as ricotta. I'm not sure what you mean by "regular cheese", though. Mozzarella is most commonly used in and on top of lasagne. If you top it only with Parmesan, the lasagne will be dry on the top after it's baked. If you're making vegetarian lasagne, you could also add feta or goat cheese. Need a recipe?

The ricotta and cottage cheese might make it a little runny. I do not think that it is a good idea to put a ton of cheese on lasagna though. First, it is not good for you. Second, too much cheese can make it too gooey and nasty. It might be okay if you were making a 15-layer lasagna though, but who would do that?

I mix a container of cottage and a container of ricotta together to add in the layers.....(noodles, cheese mixture, sauce).
I put mozzarella and parmesan on top.
So the answer is yes --- suit yourself. Mix up the cheeses that are out there for a different spin and flavor.

Of course you can. Lasagne varies from region to region, so just put in whatever you like best.
Another good cheese to add would be whole mozzarella, sliced up and just layed down on one level. Then use your ricotta mixed with raw egg on the next level, then maybe parmesan and regular cheese just on top.

How many cheeses do you want?
What about mozzarella or a combination of mozzarella and smoked gouda?
I think I saw a six cheese lasagna on a menu once. I've made them with as many as five cheeses.
Challenge yourself! =o)

Lasagna is not an exacting recipe such as a cake might be. Go ahead and experiment and do what suits your taste. You'll find that even in Italian households here in the States, ingredients are varied from family to family. Of course we each think ours is the best. LOL!
