General versions of potato salad include:
salad made with baby potatoes, cooked in their jackets and left whole (skin on)
larger potatoes, cooked in their jackets and then peeled and cut
salad with mayonnaise/Miracle Whip/sour cream/milk dressing
salad with vinegar dressing
salad with bacon, anchovies, or mustard.
salad with a fresh herb or dill dressing and/or gherkins, capers and other spices.
salad with raw onions, cooked onions or pickled onions.
salad with tomatoes or green beans.
salad with hard-boiled eggs (a combination of potato salad and egg salad)

Different versions of potato salads are served at different temperatures. Southern-German potato salads are often served warm or even hot. Some are served at room temperature. In the U.S. potato salads are commonly served chilled.

German Potato Salad:
Base Recipe (serves 5)
1.75 lbs red potatoes
4 tbsp vegetable oil
1 tbsp mayonnaise
5 tbsp apple cider vinegar
2 tbsp Riesling wine
4 tbsp beef stock
4 tbsp chicken stock
8 tbsp chopped red onion
1/4 tsp salt
1/4 tsp pepper
1 tbsp wheat flour
1 tbsp sugar
1 tbsp coarse mustard
1 tbsp chopped green onions
1/4 lb uncooked chopped bacon
Directions:
Boil the potatoes about 17 minutes
Cook the bacon till slightly crisp
Set aside potatoes, cooked bacon, flour, chopped green onions & one half of the red onions
After blending thicken the sauce with four and medium heat breakup all clumps of flour Add bacon, green onions, and onions for 20 minutes at low heat
Slice potatoes - thin
Pour sauce over potatoes and stir gently

Start with about 1pound of potatoes (it's important to use evenly sized new potatoes, and you can either scrape them or peel them). Cook the potatoes in boiling, salted water. Try to cook these perfectly so that they just fall off the blade of a knife when you stick it into the potato (you don't want the potatoes raw but you certainly don't want them falling apart either). As soon as the potatoes are cooked, drain them and put them into a bowl. It is very important to add your dressing at this stage, while the potatoes are still steaming hot (by allowing them to cool down in the dressing the flavors penetrate the potatoes). Here are 3 dressings that I like to use:
Potato salad with salsa verde: All you do is dress the potatoes with 2 large tablespoonfuls of salsa verde.
Potato Salad with olive oil, lemon and dill: Use olive oil and lemon juice dressing and add some roughly chopped fresh dill and a little salt and freshly ground black pepper. (Instead of dill you could try fresh mint, fresh parsley or fennel tops -- they'll all work).
Potato salad with dandelion and shallot: Again, use olive oil and lemon juice dressing, add some thoroughly washed and roughly chopped dandelion leaves and some finely chopped shallot, and season to taste with salt and freshly ground black pepper.

Herb And Red Wine Vinegar Dressing:
2 tablespoon red wine vinegar
5 tablespoons good quality olive oil
1 level teaspoon salt
1 level teaspoon freshly ground black pepper
1 heaping tablespoon chopped fresh marjoram
1 heaping tablespoon chopped fresh basil
1 heaping tablespoon chopped fresh parsley
3 tablespoons finely chopped shallots
Mix together all the ingredients, adding the shallots last.
Yield: 4 servings

Olive Oil And Lemon Juice Dressing:
2 tablespoons lemon juice
5 tablespoons good quality olive oil
1 level teaspoon salt
1 level teaspoon freshly ground black pepper.
Mix together all the ingredients.
Yield: 4 servings

Marjoram And Balsamic Vinegar Dressing:
2 tablespoons balsamic vinegar (just 1 tablespoon may be enough if it is a very good vinegar) 5 tablespoons good quality olive oil 1 teaspoon freshly ground black pepper 3 heaping tablespoons chopped fresh marjoram.
Mix together all the ingredients.
Yield: 4 servings

Easy Ranch Potato Salad:

20 min 20 min prep
6-8 servings

1 (1 ounce) packet hidden valley ranch dressing mix
1/2 cup mayonnaise
1/4 cup water
3 lbs small red potatoes (boiled & cubed)
4-5 slices bacon, fried crisp and then crumbled (or use Hormel bacon pieces (about 1/2 jar)
1 bunch green onions
1 cup sliced celery

1. Combine dressing mix with mayonnaise and water.
2. You may also use the bottled Ranch dressing.
3. in place of the Ranch mix, mayo,& water.
4. Add potatoes, celery, bacon, and onions.
5. Toss to coat.
6. Chill.

Easy Potato Salad Recipe

Ready in: 1-2 hrs
Difficulty: 2 (1=easiest :: hardest=5)

Ingredients:
3 pounds potatoes, cooked, peeled, and cubed
1 large green bell pepper, chopped
1 medium onion, chopped
1 teaspoon onion salt, or to taste
1/2 teaspoon celery seed
pepper, to taste
1/3 cup cider vinegar
1 cup mayonnaise or miracle whip
1/2 cup mustard


Directions:

In a large bowl, combine potatoes, green pepper, and onion. Blend remaining ingredients; add to vegetables. Mix well to combine flavors. Cover and refrigerate.

Chill potato salad thoroughly before serving.

[you may also add chopped dill pickles or add relish]

It serves/makes 6

My kids love potato salad made with...

red potatoes (skin left on)
cooked rotini noodles (corkscrews)
crumbled bacon (not bacon bits in a jar)
scallions
equal amounts of mayo (my kids like Miracle Whip instead) and Ranch Dressing

You can cube up the potato's boil for about 7 minutes and add the rotini right to the potato's and boil for 7-10 minutes more.

This is how I make both Mac and Pot Salad.
To boiled potatoes or macaroni add the following: salt, pepper, paprika, chopped boiled eggs (depends on how much I am making 2 - 4), chopped onion, sliced green olives, sliced black olives, a spoon full of sweet relish, sweet pickle juice, and yellow mustard. Then add enough miracle whip (or mayo if you prefer) to mix it up well. The pickle juice is the secret to this recipe.

Boil 8 potatoes until you can pierce them with a fork easily.
Hard cook 3 eggs.
Chop 2 ribs of celery and a small onion.
Grate an apple and a carrot.

Dice the potatoes and chop the eggs. Add the rest of the ingredients and bind them together with mayonaise. Sprinkle a little paprika on top.

5 lbs of potatoes boiled till tender
Mayonaise
Mustard
White Vinegar
Fresh Parsley
3 Hard Boil Eggs chopped
1 tsp of Paprika

Peel potatoes, cut up potatoes, add white vinegar, mustard, parsley, hard boiled eggs, paprika and mayo and mix up till coated with the mayo..

My favorite is the best and no harder to make than standard -- it's the red potato and sour cream kind.

6 large red potatoes
1/2 cup sour cream
1/2 cup plain yogurt
1/4 cup fresh chives, finely chopped
1 teaspoon salt
ground black pepper to taste
DIRECTIONS
Scrub potatoes (don't peel). If large, cut in half or in quarters. Boil potatoes in their skins until fork-tender. Drain, dry and cut into 1/2 inch cubes.
In a salad bowl, combine the potatoes, sour cream, yogurt, and chives; toss gently to coat. Add salt, and pepper to taste; refrigerate until chilled.

nice things to add to a standard potato salad (boiled potatoes and mayonnaise) are spring onions, boiled and sliced eggs and condensedmilk!

this is the best one cut peppers, onions, boil a few eggs. boil potatoes. once they are both boiled cut the m in to smaller peices add mayonaise add the egg peppers and spring onions you can add other things like tomatoes anything really that you like and of course salt and pepper then stir. mine always goes down well. it tates so nice. try it you wont regret it.
