The purpose of the sodium ascorbate may be to provide Vitamin C along with other vitamins, as in Source Naturals' "Triathlete Maximum Endurance Formula". Sodium ascorbate, and other mineral ascorbates, are antioxidants and used as preservatives in food and vitamin products. If the gotu kola product you are asking about lists "Vitamin C" in the nutritional facts, then sodium ascorbate is the source (possibly along with ascorbic acid). If sodium ascorbate is listed only in the "other ingredients" section, then it is most likely included as a preservative.
