The Gayatri Mantra is a highly revered mantra in Hinduism, second only to the mantra Om. It consists of the prefix :oṃ bhūr bhuvaḥ svaḥ ॐ भूर्भुवस्वः, a formula taken from the Yajurveda, and the verse 3.62.10 of the Rigveda (which is an example of the Gayatri mantra). Since all the other three Vedas contain much material rearranged from the Rig Veda, the Gayatri mantra is found in all the four Vedas. The deva invoked in this mantra is Savitr, and hence the mantra is also called Sāvitrī.
By many Hindus, the Gayatri is seen as a Divine awakening of the mind and soul, and within it a way to reach the most Supreme form of existence, and the way to Union with Brahman. Understanding, and purely loving the essence of the Gayatri Mantra is seen by many to be one, if not the most powerful ways to attain God.
In Devanagari:
ॐ भूर्भुव: स्वः ।
तत् सवितुर्वरेण्यं ।
भर्गो देवस्य धीमहि ।
धियो यो नः प्रचोदयात् ॥
Goddess
Originally the personification of the mantra, the goddess Gayatri is considered the veda mata, the mother of all Vedas and the consort of the God Brahma and also the personification of the all-pervading Parabrahman, the ultimate unchanging reality that lies behind all phenomena. Gayatri Veda Mata is seen by many Hindus to be not just a Goddess, but a portrayal of Brahman himself, in the feminine form.[citation needed] Essentially, the Goddess is seen to combine all the phenomenal attributes of Brahman, including Past, Present and Future as well as the three realms of existence.[citation needed] Goddess Gayatri is also worshipped as the Hindu Trimurti combined as one. In Hindu mythology, there is only one creation who can withstand the brilliance of Aditya and that is Gayatri.
Gayatri is typically portrayed as seated on a red lotus, signifying wealth. She appears in either of these forms:
Having five heads with the ten eyes looking in the eight directions plus the earth and sky, and ten arms holding all the weapons of Vishnu, symbolizing all her reincarnations.
Accompanied by a white swan, holding a book to portray knowledge in one hand and a cure in the other, as the goddess of Education.

I hope you get an idea about Gayatri mata and gyatri mantra from the sites suggested by learned answerers before me. They have also given you the source of information they got to answer this question.
However, I would like to add a few things based on my own experiences and understanding. I am doing this to make it understandable to ordinary readers who have not yet obtained profound knowledge and cannot see much from what these guides give you.
Gyatri mata is savitri mata or something close in attire to saraswati mata. Vishwamitra formulated this mantra. You can chant this mantra in front of an alighted deepak.
In Gita, Lord Krishna says that in chhanda I am Gyatri.
The meaning of this mantra is:
Thou existence is eternal
Thou consciousness is eternal
Thou bliss is eternal
Ilumine my mind.
This mantrs is meant for seeking elightenment and knowledge

Sage Viswamitra has founded the Gayathri mantra and it is very efficacious and it will save all those who chant this mantra. Gayathri Mata is depicted as Gayathri, Savithri and Saraswathi. The mother gayathri is worshiped at the time of sunrise, Noon and during sunset. All can chant Gayathri mantra. It is an universal mantra. But one should learn from those who are conversant with correct pronunciation. Actually this is also a worship of Sun god. The general prayer is that our intelligence should glow more. Mere chanting of Gayathri mantra is enough. If you want to perform Puja you must learn it from those who are proficient in it.

GAYATRI- is the feminine form of gāyatra, a Sanskrit word for a song or a hymn. It may refer to:
-In Hinduism, it is one mantra in particular, attributed to Vishwamitra, and a goddess as its personification, a representation of the Parabrahman.
-The name of a Vedic poetic meter of 24 syllables (three lines of eight syllables each)
-Any hymn composed in this meter.

Gaytri is treated as Ved-mata. The poster at #1 has beautifully explained the mythological meaning
Let me throw some light on the esoteric meaning of Gayatri
Gayatri - the one who does "Tran" (save) of the worshipper... it says the one who worships Gayatri is saved from the Maya and birth and deaths
Gayatri is called Ved-mata as it is said all vedas are born out of Gayatri...so what is Gayatri ?
When the Turiya Tattwa manifests as Iswara Tattawa, the Energy principle manifests as Vidya. Vidya Tattaw is what tells Ishwara that he is God and he has to manifest look after and destroy the world.
This Vidya Tattwa is in fact called Gayatri. This Vidya Tattwa manifests as intelliegence (Buddhi), and our intelligence is a sub-set of Universal Intelligence.
In Gayatri Mantra we actually pray God to develop our intelligence. This is the only mantra where we do not ask for wordly pleasures and heavens.... not even Moksha
When our intelligence develops, it lights up as Pragya...and pragya is a state of intelligence where we are not under the realms of Maya or Avidya
Manifestation of Prgya itself is the highest possible state of intelligence in us... hence Gaytri awakens that Pragya in us...and we understand what Dharma is, what universe is and what our purpose is
That z why Gayatri Mantra is one of the highest mantras and is not prescribed for lower mind people (shudras)... Gayatri mantra is for Brahmins.... here brahmins means those who are on the path of Truth and are out of narrow boundaries of wordly pleasures...
