Yes, shortening makes great cookies, and if you are making ones that should be a bit buttery, use butter flavored crisco, which has no butter, just the taste. It even comes in sticks like butter, but is in the shortening aisle, needs no refrigeration, You do have to add some water to substitute in recipes, but the directions are on the package.

Yes, you can use shortening instead. However, it will change the flavor to a degree.
The main difference between using the two is that using butter will give you a softer cookie, whereas using shortening will give you a crisper cookie.

By, the way, did you know that margerine is only one molecule away from being plastic, and has no food value at all?
If you placed an open container of it on your garage floor it would sit there unchanged for years. Not even the rats or mice will touch it. Not to mention there's no comparison in the taste to that of butter.
I won't have it in my house, much less eat it!

You can substitute margarine (not diet margarine though--you have to use one that says at least 65% oil on the box. Diet margarine is mainly water and will completely change the texture/outcome of your cookies. It will ruin them.

I have seen some recipes (especially for peanut butter cookies) that call for vegetable shortening only--no margarine or butter.

You can't use oil though--it's too runny and will make your cookies flat and too crunchy/burnt.

yes, you can substitue with margarine, or just shortening however the cookies won't turn out as moist as they do with butter.
