Depends how much you use.
The right amount, make them taste a little like Vanilla.
A gallon, (in a single batch toll house recipe), would be catastrophic!
Sure you could bake without it, but why not try something more interesting, like baking without flour, or sugar.
Why make something that looks right, but doesn't taste quite right?

Vanilla Extract is a flavoring. You can make the cookies without it, but the taste will be slightly off from what you would get with it.

Vanilla extract is used to mitigate the eggs' flavor in baked desserts. I guess you could not use it but the eggs' taste will probably come out. Cheers

It definitely makes them taste better.
However, don't buy "imitation" vanilla, spend a little more and buy the "pure vanilla extract."
It makes a big difference in the taste.
