I have to cook at the soup kitchen tomorrow, and I"m having a hard time figuring out what to make. Any creative recipes using spam or hominey?

that's what I'm working with.

Are you limited to only spam and hominey? Are there any other ingredients you can use? I figure a simple meal is panfried spam with grits. It's easy to prepare in large quantities. If you have the option to do something else with more ingredients, you can make polenta cakes with the hominy. Just don't add as much liquid (chicken stock, milk, water, etc) to your hominey so that it's thicker, about a quarter less of the quantity of liquid you would use. Pan fry cubes of spam, add them to the grits. Get a well-greased cast iron pan or large baking pan, pour the grits and spam in, and bake it covered at about 400. Portion out, serve with butter and maple syrup. If you're not limited to these two ingredients, you can also use some cheese.

Interesting choice of food. Well, I think you can make spamburgers by slicing them up in nice patty like sizes. Instead of beef, you use the spam!

I know you can make a delicious soup with hominey. My family makes it all the time. In Spanish its called pozole. I'd recommend you check some sites out on how to make. Below is one that says is quick and easy.

I would go with a soup. Cube up the spam and then put them both in a big soup pot. It would be great if you had some chicken stock or something plus some celery and onions. Add water and whatever seasonings you can find. Good Luck!

Can you bring anything from the store? Spam is spiced ham so I was thing what if you diced it up small and added it to dried beans (bean soup with seasoning mix) potatoes, onions, carrots. Depending on how much you cook it goes pretty far. It does require a few hours to cook properly. Then make some cornbread with it.
