•CREAMY SALSA DIP•
1 cup sour cream
1 cup salsa-I use chunky
1 envelope Good Seasons Ranch salad dressing mix

Mix well and chill. Good with tortilla chips and raw veggies.


•CUBE STEAK WITH SALSA•
4 cube steaks, about 5oz each
1/4 t salt
1/4t pepper
1T butter or margarine

SALSA

2 large tomatoes chopped
2T chopped red onion
3T chopped celery
3T chopped green pepper
2T chopped green chile peppers
1/2 mustard seed
1T red wine vinegar
1T chopped parsley or cilantro
1/2T salt
dash of black pepper
2T oil

Cheddar cheese and sour cream optional but not if you want this recipe to be healthy!!!!!!!

Start making the salsa in a bowl combine the tomatoes onion celery green pepper chile peppers mustard seed parsley or cilantro vinegar salt and pepper. Stir in oil let salsa stand for a few min to let flavors blend in a skillet heat butter brown cube steaks in butter on both sides reduce heat. Cook uncovered for a few more min until cooked to your liking, then sprinkle with salt and pepper arrange steaks on hot serving plate. spoon a little salsa over each steak. Serve remaining salsa alongside serve with sour cream grated cheese and tortilla chips if desired.

•APPLEBEE'S PICO DE GALLO•
Yield: 2 cups

3 large tomatoes, Diced 1/2 Tsp freshly-ground black pepper
1 large onion, Diced 1/2 Tsp garlic powder
2 Tbl jalapeos, Diced 1 Tbl olive oil
1/2 cup fresh cilantro, Chopped 1 Tbl white vinegar
2 Tsp salt

Mix all ingredients together in large container until well blended. Allow sitting for at least 6 hours, it is better if allowed to sit overnight.

Comments: This is a great summer relish to serve with chips, or even on a hamburger.


KID FRIENDLY SALSA:
•SALSA•

Here's what you will need to make it:

* two 14-ounce cans of diced, spicy tomatoes

* 2 ounces diced green chilies

* 2 cloves of garlic, diced

* 3/4 cup chopped cilantro -- it's an herb that looks like parsley

* 1 medium onion, chopped

* pinch of salt

* tortilla chips

* bowl

* sharp knife


Here's what you have to do:

1. Check with a grown-up before you start this.

2. Put all of the ingredients in a bowl and stir around, adding the green chilies to taste. (This is what makes it spicy!)

3. Now take a chip and dig in!

4. Bon Appetit!


•VERY HOT SALSA•

This easy to make recipe is a hotter variant of the popular Mexican relish. It can be served as a side with most dishes, but is best when eaten simply with corn tortilla chips. Be bold about adding more hot peppers, you may like it ! (But start with fewer peppers if you are not used to hot foods).

It can also be made in large batches in late summer when tomatoes and peppers are in excess, and frozen in bottles for use through the year. Once thawed, try to finish a bottle within a week or two.

Ingredients

* 8 tomatoes, chopped
* 12 hot peppers, chopped
* 2 onions, chopped
* 1/2 (half) bell pepper, chopped
* 1 teaspoon chopped garlic
* 1 teaspoon salt
* 1.5 (one and a half) tablespoons lemon juice (or wine vinegar)
* 3 tablespoons cilantro (coriander) leaves

Mix all ingredients in a bowl and let sit for one hour before serving. Store refrigerated if necessary for upto a week or so.

You can adjust the number of hot peppers up or down to suit. For maximum effect, select one or more of the following varieties - Habarnero, Cayenne, Thai Hot, Super Chili, Serrano etc.

Mexican Salsa:

8 servings

4 large tomatoes or 8 small romane tomatoes
1 large red onion
2 limes
1/2 cup cilantro
2 tablespoons sea salt
hot pepper

1. Chop tomatoes, onions, and cilantro mix in bowl.
2. Squeeze limes over mixture.
3. Add sea salt.
4. Sample mixture.
5. Here is where you add more salt or limes to suit your tastes.
6. Chop hot peppers and mix.
7. We usually don't do this step because we like the fresh taste not a hot taste.
8. Serve with salsa chips.

Hot and spicy salsa

Hot and spicy salsa

5 Roma tomatoes -- (5 to 6)
3 fresh or pickled jalapenos, stems removed -- (3 to 4) (or more if you like it really spicy)
1/2 lg. Vidalia onion, quartered
2 cloves fresh garlic
2 Tbs white vinegar (or cider)
2 tsp salt (more if you like it saltier)
1 8 oz. can tomato sauce
A sprig or two of cilantro if you like
splash of lime juice or lemon juice
Mix all ingredients in a blender and pulse so it's still chunky but not too chunky. Pour into a medium saucepan and heat over medium about 15 minutes. It'll be pretty frothy. You can can this if you like (in a boiling water canner, process for 15 minutes). This also is great mixed with Velveeta mexican cheese, in cubes, that I put in a crockpot. I put in about a cup of salsa and it's like a queso dip that you can use with tortilla chips.

You can use any kind of chiles you want

I have one that's in Word format.

I'll try copy and paste...............

1 Quart Tomatoes (diced or home canned)
2-6 pickled Jalapeno Peppers chopped (6 is hot)
2-3 Bell Peppers
2 Onions
1 Tablespoons Salt
1 ½ tsp. Garlic Powder or chopped garlic
¼ Cup Vinegar
1/8 Cup Lemon Juice
½ Cup Catsup
1 small can Tomato Paste (6 oz.)
1 approx. quart sized can diced tomatoes drained

Combine the one quart of tomatoes and the rest of the ingredients except the diced tomatoes. Simmer until peppers and onions are cooked.
Add diced tomatoes last to make the salsa chunky.

I love salsa and it's very good for you

Ingredients
3 large tomatoes, seeded and chopped
1 small white onion, minced
1 jalapeno pepper, diced
1 tablespoon fresh chopped cilantro or parsley
1 teaspoon sea salt dissolved in 2 tablespoons freshly squezeed lime juice

Method
Combine all ingredients in a bowl and serve with your favorite tortilla chip.

i have a great recipe...me and wifey "can" over 200 pints a year...which is 100 quarts...equals 50 gallons...all natural out of our garden...it you "can" and want the recipe....email me
