I get the ages mixed up, any answers?

A stag is a male turkey.

A cock or rooster is a male over a year old.

A cockerel is a male under a year old.

A hen is a female that has either laid her first egg or is over a year old.

A pullet is a female that is either under a ýear old or has not ýet laid her first egg.

Pullets are female usually under 1 year but they can lay eggs, then they are hens. Cockerels are young males then they become roosters. I don't know what a stag is other then it not being in the chicken family?

I have never heard the term stag used in chicken terms. I have raised them for a long time, so, you got me. Any way, a cockrel( under one year) is a young male hen that has not yed developed the long spurs ( spurs are a sign of sexual maturity) on the back of their legs. A rooster( over a year and has reached sexual maturity), as you can guess, has.
A pullet ( under egg laying age, under one year) is a yung female that has not yet reached sexual maturity. A hen, as you can guess again (over one year and reach sexual maturity) has started to lay eggs, and is an older female.
