My family doesn't eat eggs at all but a recipe I'm making calls for 1 and 1/3 cups of egg substitute. How can I make my own?

For thickening purposes, you can use any of the following:

2 tbsp corn starch + 2 tbsp water = 1 egg
2 tbsp arrowroot flour + 2 tbsp water = 1 egg
2 tbsp potato starch + 2 tbsp water = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg
1 banana = 1 egg in cakes

In pancakes and cookies, you can leave the egg out and it won't make a difference. Be sure to add two tablespoons of liquid to replace the lost moisture.

If you need more than one egg for the recipe, you will have to use something with a little body to it to replace the eggs. To replace one egg, you can use:
half a small, ripe, mashed banana
1/4 cup of any kind of tofu blended with the liquid ingredients
1-1/2 teaspoons of a commercial vegetarian egg substitute, such as Ener-G Egg Replacer, follow the directions on the box
1/4 cup of pureed fruit of your choice
If you are using the pureed fruit, you may want to add 1/2 teaspoon baking powder to help the baked good retain it's original texture.
1 tablespoon of finely ground flax seeds whipped with 1/4 cup of water. The flax seeds will make the water gel

just remember egg beaters are just egg whites that are artifically colored
