I'm a little confuzzled by your question, but if I read it right...always be friendly and professional but learn enough from your customer to be personal. i.e. ask about the wife and kids, vacations, etc. If you see them outside of work (the grocery, a bar, church) say hello briefly but let them start any kind of conversation. Some people don't want to explain how they know you. Some are very nice. Play it by ear.

Look it at this way: "Hi, I order this meal but I didn't like it, can I order something else? telling the customer that you will change the value/receipt.
Would you like the customer to be happy and come back again, or would you like the customer leave unhappy and tell everyone the service is bad and unpleasant?
