I believe it stands for "Experimental Model", like a prototype used for field testing.. The first M16 rifles were originally called XM-16's...the designation was changed just to M-16 after field testing showed there were changes that needed to be made.

Until a new weapon is designated by the Pentagon as an acceptable military weapon , it is designated XM(Experimental Model). Upon acceptance, the X drops off , but the M stays !

Tried and failed to find that. Best Guess is X for experimental just like some military aircraft and M for military.

Experimental i.e. The new light weight Howitzer was the XM777 now that it is being fielded it is the M777.
