I"m having egg salad sandwiches and a garden salad. I know it's not gourmet...but you asked...lol...

We just finished, and it was DEE-LISH! Plus it only takes about 15 minutes to prepare....

~ Baked center cut pork chops, sprinkled with salt, pepper, onion & garlic seasonings (15 mins at 425 degrees)
~ Steamed Green Beans with a little butter, salt & pepper (5 min in Bird's Eye Steamable bag)
~ Au Gratin Potatoes (10 mins on the stove)

Worked late tonight so we had

chicken strips
ramen noodle (stir fried with Moz and cheddar cheese)
corn

I cook better when I don't have to work overtime. Although lately that has only been on the week-end. Big sunday dinner.

Chicken & Cheese Enchiladas
From: Campbell's Kitchen
Prep Time: 15 minutes
Cook Time: 35 minutes
Serves: 4


Ingredients:

1 can (10 3/4 oz.) Campbell's® Condensed Cheddar Cheese Soup
1/2 cup milk
2 cups diced cooked chicken
1/2 cup Pace® Chunky Salsa
1 can (about 4 oz.) chopped green chiles
1 tsp. chili powder
8 flour tortillas (8'')

Directions:

MIX soup and milk.

MIX 2 tbsp. soup mixture, chicken, salsa, chiles and chili powder.

SPREAD about 1/3 cup chicken mixture down center of each tortilla. Roll tortillas around filling and place seam-side down in greased 3-quart shallow baking dish.

POUR remaining soup mixture over enchiladas. Cover.

BAKE at 375°F. for 35 min. or until hot ...it's delicious and we eat it alot ....try it & you will love it :)
