Basic Fried Pickles

Vegetable oil for frying
1 cup self rising cornmeal mix
1/4 cup flour
1/2 teaspoon ground black pepper
1 egg, lightly beaten
1/2 cup milk
2 cups dill pickle chips, well drained

In a deep fryer or a large Dutch oven, with a deep frying thermometer, heat to 360F.
In a shallow bowl, stir together cornmeal mix, flour and black pepper.
In another bowl, combine egg and milk. Dip dill chips in milk mixture and roll in cornmeal mixture. Fry pickles in batches for about 3 minutes until golden brown. Drain on paper towels.

How about making your own?

2 Large, firm, crisp dill pickles (Clausens)
1 cup panko bread crumbs
1 egg mixed in 1/2 cup water
1 tsp. hot sauce
1/2 tsp salt
1/4 cup parmesan cheese
Olive oil

Slice dill pickles into 1/2 inch pieces and drain juices. Blend water, egg and hot sauce. Mix panko with cheese and salt.
Heat olive oil until a drop of water sizzles when you put it in it.
Take pickle slices and put in egg wash. Dredge in panko mixture and return to egg wash. Return to panko mixture and tap off excess. Drop in hot oil and cook until browned. Serve with Ranch Dressing.
