Val, check out 'A Book of Middle Eastern Cooking' by Clauda Roden. I have the old paperback version, but they just released an absolutely gorgeous hardcover edition with photos a year or two ago. The book features many Middle Eastern dishes that use rose water. Here is a quick recipe for Rose Water Syrup:
2 cups sugar
1 1/4 cups water
1 Tbsp lemon juice
2 tsps red food coloring
1/4 cup rose water
* make a thick syrup by simmering the sugar, water, and lemon juice together slowly, stirring, until coats the back of a spoon;
* stir in the rose water and simmer for another minute or two
* allow to cool and pour into a clean, dry bottle. Close tightly. Can be mixed into ice cold water for a refreshing drink. You could try it on shaved ice also.

I do. I use it to make a syrup and pour it over homemade cakes or you can make a rose drink and drink it on a sunny day. All you need to do is mix equal parts rose water with plain water and get a nice rose drink.

I worked at a place that would use tap water cut with some rose water to brew ice tea. Very nice touch!

I've used it for making Turkish delight. Lemon juice and lemon zest are also good flavours for this. Pour the lemon-flavoured liquid into a shallow tray then, when it's almost set, pour in the rose-flavoured liquid, so when it's set and you've cut it into cubes, the cubes are pink at the top and light yellow at the bottom.

I've made my own Turkish Delight - delicious and remarkably easy - also used rosewater to flavour ice-cream (you need quite a lot because of the chill, or can supplement with candied rose petals).

The home-made Turkish Delight made great gifts - also, you could sandwich it between two plain biscuits and heat them gently so it went all gooey ... texture of toasted marshmallows, gorgeous.
