Baba Ganouj is a great dip for pita wedges. Here's the recipe I use:
1) Make 4 shallow slits in 1 large (1 lb.) eggplant, then broil for 15-20 minutes, turning to char on all sides, until eggplant is completely soft;
2) Put the eggplant in a colander to drain well, allow it cool, then peel and coarsely chop;
3) Place the eggplant chunks in a food processor with 2 tbsps of freshly squeezed lemon juice, 2 tbsps of olive oil, 3 tbsps of tahini paste, 2 cloves of crushed garlic, 1/2 tsp of ground cumin, and salt & pepper to taste;
4) Process until smooth, put it in bowl and stir in chopped parsley
This can be made several days in advance. Your friends and guests are going to go nuts for it, and you'll want to make a double batch next time. Enjoy!

You can try Beef Shawerma. It's a shaved beef in pita bread with other ingredients and tahini sauce for added flavoring. It's incredibly yummy.
