This recipe sounds good and is lowfat too!

Spinach Cheddar Frittata

Ingredients:
4 large eggs
2 large egg whites
1 cup fresh spinach — washed and chopped
2 tablespoons scallions — chopped fine
1/4 teaspoon salt
1/4 teaspoon pepper
1 serving cooking spray
1/2 cup reduced fat cheddar cheese — shredded

Instructions:
Preheat oven to 400°F. Beat together eggs and egg whites in a large bowl; stir in spinach, scallion, salt and pepper.

Coat a 12-inch ovenproof nonstick skillet with cooking spray; heat skillet over medium heat. Pour egg mixture into skillet and cook until partially set, about 5 minutes.

Sprinkle cheese over eggs. Bake in oven until cheese softens and eggs firm up, about 5 minutes. Remove from oven and let stand 1 minute before cutting into 8 wedges. Yields 2 pieces per serving.
