I'd like to make a carrot cake (or carrot cake cupcakes), and I'm having a lot of trouble finding a good recipe online. Can anyone offer any suggestions, preferably from a recipe that YOU have made before, that way I know how it will turn out? Also, if anyone could find the Cheesecake Factory's Carrot Cake recipe (NOTE: not the carrotCHEESEcake recipe, which I have found online), that would be absolutely awesome!

I notice that a lot of them have raisins and crushed pineapple in there. Is that the normal for carrot cakes? Will it taste like pineapple? If I do go with a recipe that has pineapple in it, should I strain it, or leave it in some of the packing liquid (it's not syrup, it's natural juice)?

Fabulous Carrot Cake!:

1¼ hours 15 min prep
12 servings

CAKE
2 cups sugar
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
3 cups finely shredded carrots
1 cup oil
4 eggs
3/4 cup chopped walnuts (optional)
ICING
1 (8 ounce) package cream cheese
1/2-1 cup margarine
2 teaspoons vanilla
3 1/2-4 cups powdered sugar

1. Mix dry cake ingredients.
2. Add carrots, oil and eggs.
3. Stir till all is wet.
4. Add nuts, (optional) Put in greased and floured 9 x 13 inch pan.
5. Bake at 325* for 50-55 minutes .
6. Cool.
7. Cream together cream cheese, margarine, vanilla Add powdered sugar.
8. Spread over cooled cake.

This carrot cake recipe is perfection...I have used a few others and this beats them ALL!! ENJOY...I know you will.

1 1/4 cups canola oil
2 cups sugar
2 cups flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon
4 large eggs
1 teaspoon vanilla extract
1 teaspoon burnt sugar
3 cups carrots, grated
1 cup pecans, chopped (optional)

**To make burnt sugar, cook sugar in a small skillet over medium heat until it carmelizes; pour immediately into batter.
Combine oil and sugar in a large mixing bowl.
Sift dry ingredients together in another bowl and add half to oil and sugar.
Add eggs, one at a time, alternating with the remaining dry ingredients.
Stir in carrots, flavorings and nuts.
Pour into a greased 9 x 13 pan.
Bake at 325°F for approximately 1 hour.
Cool and then frost with cream cheese frosting:

1 (8 ounce) package cream cheese, softened
1 lb confectioners' sugar
1/2 cup butter or margarine, softened
1 teaspoon vanilla

Blend together cream cheese, confectioners' sugar, butter and vanilla.
Beat with electric mixer until smooth and creamy

INGREDIENTS
4 eggs
1 1/4 cups vegetable oil
2 cups white sugar

2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder

2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans (optional)

1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking
powder, salt and cinnamon. Stir in carrots. Fold in pecans. (if using) Pour into prepared pan.

Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.

I will dig my grandmother's recipe out and add it to this tonight. It is the BEST carrot cake ever--very moist and completely made from scratch including the cream cheese frosting. I don't put raisins and pineapple in my cake but that is just a personal preference, if I wanted a fruit cake I would make one.

Better Homes Cook Book is the way to go for everything. I am going to type it just for you and you will love it.
Bake : 30 minutes at 350
4 eggs, beaten
2 cups all purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon cinnamon
half tps salt
half tps baking soda
3 cups finely shredded carrot( lightly packed)
3/4 cup cooking oil

grease your pan with flour and butter.
Combine all dry ingredients and in another bowl all the wet ingredients plus the carrots and add with flour mixture and stir till combined. you know the rest. pour into batter. make cure the carrots are finely shredded or they will sink to the bottom. Good luck and tell me if you like it.

This recipe is great and I've made for yrs.

Carrot Cake:

2 cups brown sugar
1 cup vegetable oil
4 eggs
3 cups grated carrot
2 cups all purpose flour
2 tsp. baking soda
2 tsp. baking powder
dash of salt
4 tsp. cinnamon

cream together brown sugar and veg. oil
add eggs and grated carrot
mix well
add flour,soda,baking powder,salt and cinnamon.
mix well

pour into 9x12 baking pan that has been greased and floured(may use pan spray)

bake at 350 degrees for 35-45 minutes.

TOPPING:

4 tbsp.soft butter
2 oz. cream cheese(may use pineapple cr. cheese)
Add:2/3 lb.icing sugar
1 tsp. vanilla
mix well and spread on cooled cake.

Very moist and tasty.
