There are three things that Chows are renowned for
1) They have a great big purple tongue - almost black. Because they are so superbly adapted for the cold, they suffer in the heat, and as dogs sweat through their tongues, Chows have particularly adapted very large porous tongues to help cool down. Quite amazing really.
2) Chows are bred to stand very erect and proud, which actually means their hind legs have a congenital weakness of the knee ligaments. Look closely and you will see they do not have the classic dog knee joint at all which is a very pronounced inverted "S" shape. Chow's knees are almost straight. Chows are most commonly gold in colour (although often jet black), with a big fluffy ruff of fur around their heads, that makes them resemble a lion, which in turn has led breeders to encourage that leonine appearence.
The outcome of this unfortunate breeding is that many Chows suffer from damage to their knee joints. In many cases the Cruciate Ligament which joins the muscles to the knees simply fails. This happens in dogs as young as one or two, and although it is operable the dog will never be fully fit again.
3) Chows make great guard dogs. They are incredibly protective and loyal, quite remarkable considering their origins, although, perhaps that is why they are so loyal - in a family where they get genuine love (as opposed to one that will make Chow Chow mein out of them at the drop of a hat), they reward their owners with their protective streak.

its just genetic, I think sharpei tongues can also be purple. Its most likely caused by spots of melanin
