The percentage of the major crops grown in the US such as soybeans, corn, cotton etc. would be around 70%. A very small portion of these crops are consumed as food (for humans). Of the food crops such as vegetables and fruits there is a fraction that are GM. There are some GM animal products but I can't give you an accurate percentage, less than 10% I'm sure. For references Goggle GM crops and animals in the US. You'll find a lot on individual crops and animals, but I don't know of any that would answer your whole question in one reference.
