Here's an easy one:

VEGETARIAN LASAGNA

1 lg. jar spaghetti sauce
1 lb. broccoli, well drained
1 lb. spinach, well drained
Mushrooms, well drained
1 lg. carton cottage or ricotta cheese
1 egg
Parmesan cheese
Noodles

Spread a layer of spaghetti sauce in bottom of 9 x 13 inch pan, then a layer of noodles. Mix together broccoli, spinach and mushrooms. Spread over noodles. Mix together cottage cheese, egg and 1/4 cup Parmesan cheese. Spread over vegetable layer. Another layer of noodles. Spread remaining spaghetti sauce, sprinkle Parmesan cheese over top. Cover tight with foil and bake 45 minutes at 325 degrees. Remove foil and bake 15 minutes. Let stand 10 minutes before serving.

Vegetarian Lasagna:

1 1/2 quarts spaghetti sauce (your favorite homemade or jar spaghetti sauce)
1/2 cup grated carrots
1/2 teaspoon oregano
6 cooked lasagna noodles
1 (16 ounce) container ricotta cheese
1 package frozen chopped spinach, thawed and well drained
2 eggs
1 1/2 cups thinly sliced zucchini
1 cup sliced fresh mushrooms
3 cups shredded part-skim mozzarella cheese
1/2 cup grated parmesan cheese

1. Mix carrots, oregano, and spaghetti sauce together.
2. Mix Ricotta, spinach, and eggs together in separate bowl.
3. Spread ½ cup spaghetti sauce in bottom of 9 x 13 inch baking dish.
4. Layer 3 lasagna noodles, ½ remaining sauce, ½ Ricotta mixture, ½ sliced zucchini, ½ sliced mushrooms, ½ Mozzarella, and ½ Parmesan.
5. Repeat layers with remaining ingredients.
6. Bake in 350 degrees oven for about 45 minutes.

This is a really great recipe for Spinach Lasagna
* 1 tablespoon extra virgin olive oil
* 2 (10 ounce) packages frozen chopped spinach
* 1/2 onion, chopped
* 1/2 teaspoon dried oregano
* 1/2 teaspoon dried basil
* 2 cloves garlic, crushed
* 1 (32 ounce) jar spaghetti sauce
* 1 1/2 cups water
* 2 cups non-fat cottage cheese
* 1 (8 ounce) package part skim mozzarella cheese, shredded
* 1/4 cup grated Parmesan cheese
* 1/2 cup chopped fresh parsley
* 1 teaspoon salt
* 1/8 teaspoon black pepper
* 1 egg
* 8 ounces lasagna noodles

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large pot over medium heat saute spinach, onion, oregano, basil and garlic in the olive oil. Pour in spaghetti sauce and water; simmer 20 minutes. In a large bowl mix cottage cheese, mozzarella cheese, Parmesan cheese, parsley, salt, pepper and egg.
3. Place a small amount of sauce in the bottom of a lasagna pan. Place 4 uncooked noodles on top of sauce and top with layer of sauce. Add 4 more noodles and layer with 1/2 sauce and 1/2 cheese mixture, noodles and repeat until all is layered, finishing with sauce.
4. Cover with foil and bake in a preheated oven for 55 minutes. Remove foil and bake another 15 minutes. Let sit 10 minutes before serving.

One large container of ricotta cheese
1 egg
10 oz bag of frozen spinach defrosted and drain (squeeze all the water out with a paper towell)
4 Large tomatos
1 bag of mozzarella cheese
1 cup of crumbled fetta
1 jar of your favorite spaghetti sauce
garlic powder and italian seasonings

In a large bowl combine ricotta with the egg, and garlic powder and seasonings (sprinkle generously so it tastste very flavorful

make the pasta noodles as directed
Spray the pan (I use a glass 9x13 pan) with nonstick spray
Layer the ricotta mixture then a bit of sauce, a layer of spinach, a layer of sliced tomatos and mozzarella cheese. Repeat until you cover the pan and top with just sauce mozzarella cheese tomato slices and feta.

Its my very own creation and it is to die for!!!
