There are several drugs that may be used; generically they're called local anesthetics. Lidocaine is probably the most commonly used, because of its quick onset and high margin of safety, but some other drugs may be chosen which last longer, such as bupivacaine. Novocaine is the brand name for procaine, an old drug which is not used often anymore- it doesn't last long and has the potential to cause allergic reactions.

It can be a number of agents, Novocaine (or generic: Procaine) is one of a whole bunch. If it was injected it was likely either this, Bupivicaine (Marcaine), or Lidocaine.
If they sprayed it on or applied a jel, it was probably Lidocaine or Benzocain.

Usually Lidocain. There are different forms depending on the location of the area being sticthed, but this is the most common.

lidocaine 1%.
bupivicaine is also sometimes used if a longer duration of action is needed, but most of the time it's lidocaine.
