Peter, Andrew, James and John were fishermen. Matthew was a tax-collector. The Bible doesn't mention the occupation of the others, but they would more than likely have been involved in some kind of trade or another similar to the preceeding ones; maybe fishing or carpentry or something else.
Luke and Paul weren't disciples of Jesus, but we know that Luke was a physician (doctor) and Paul was a man who was actively involved in the synagogues and worked alongside the Pharisees (he was more than likely one himself). I can't remember for sure. Sorry.

Some of the apostles had been disciples of John the Baptizer before becoming Jesus’ disciples. (Joh 1:35-42) Eleven of them were evidently Galileans (Ac 2:7), Judas Iscariot being considered the sole Judean. They were from the working class; four were definitely fishermen by trade; one had been a tax collector. (Mt 4:18-21; 9:9-13) At least two of them appear to have been cousins of Jesus (James and John, the sons of Zebedee). They were men who were viewed by the religious leaders as “unlettered and ordinary,” indicating that their education was elementary and not from the schools of higher learning. A number of them, including Peter (Cephas), were married men. (Ac 4:13; 1Co 9:5)

The fish represents enlightenment and the water represents the unconscious. Do you see that the teaching has been changed? Look how far we have fallen from what was meant.

Some, but not all, were fishermen. I love the scripture in Matthew where they straighway left their nets, and followed him.

No. Not all of them were fishermen.....Look at Matthew. But many of them were and they on occasion went back to it.
