What you want is for the PB to flow instead of building up too much shear stress between it and the bread. When the shear stress is too high, bread starts to tear. The peanuts are just making it worse by concentrating stresses to sharp corners and making bread tear even faster. So you have to apply a rate of shear that is inversely related to the viscosity of the peanut butter. If the PB is cold and thick, then you have to spread really slowly to avoid building up shear stress. If you heat up the PB or use a hot knife, the viscosity of the PB will drop, allowing you to spread faster.

Not that I've researched it extensively, but I've not seen any information on PB viscosity versus shear rates. I've not seen bread companies publish information on strengths of their breads either. So I can't tell you how fast you can spread for a given PB viscosity without tearing the bread. You will just have to do trial and error. In general, do it really slowly if you have hardened PB. If you want to go fast, heat it up to thin it.

That was probably more science than you wanted on spreading peanut butter on bread.

Lightly buttering the bread first works.
Heating the peanut butter slightly in the microwave would also help.
